Required products :

  • 80 grams of manchego cheese (optionally can be replaced with another hard flavored cheese, such as parmesan or cheddar)
  • 125 grams of soft butter
  • 1 1/2 teaspoon hot pepper flakes
  • 10 grams of fresh rosemary, finely chopped
  • 150 grams of flour

Method of preparation :

Grate the cheese as finely as possible and mix it with the butter. Beat with a mixer until a creamy fluffy consistency is obtained. Season with salt and pepper and add 1 teaspoon of hot pepper and the whole amount of chopped rosemary.

Add the flour and continue to mix with the mixer to obtain crumbs. Transfer the dough to a well-floured surface and shape it into a ball with your hands. Then form it into a roll 18 cm long and wrap it in foil. Refrigerate for 1 hour.

Preheat the oven to 180 degrees and line two baking trays with parchment paper.

Cut the cooled and hardened roll into thin slices (about 7 millimeters) and arrange them in trays at a distance from each other. Sprinkle with remaining hot pepper.

Bake for 13-15 minutes until golden and crispy.

Cool for a few minutes in the pan, then transfer to a suitable place to cool completely.

You can store the saltines in a tightly closed box for up to 2 weeks, and you could prepare the dough 3 days in advance and keep it in the refrigerator, and store it frozen for up to 1 month.
