Gluten-free buckwheat pancakes high in protein and folate. They contain buttermilk, spinach and red pepper, which makes them even tastier and with an interesting green color.

Required products :

  • Hot water
  • 284 milliliters of buttermilk
  • 1 egg
  • 2 poached eggs per serving (optional)
  • 200 grams of spinach
  • 175 grams of buckwheat flour
  • 1 teaspoon gluten-free baking powder
  • a pinch of paprika
  • olive oil

Method of preparation :

Put the spinach in a colander and pour boiling water to soften it. Drain the excess liquid and transfer the spinach to the blender along with the buttermilk and eggs. Blend until smooth.

Put the buckwheat flour, baking powder and red pepper in a bowl and combine with the puree. If the mixture is thick, add 1 tablespoon of water.

Heat olive oil in a pan and make small pancakes from the mixture. Cook for 1-2 minutes or until bubbles appear on the surface of the pancake, then turn and fry for another 1 minute or until done. Repeat until the mixture is done. You should get about 12 mini pancakes. Serve with poached eggs if desired.
