Required products :

  • 2 tablespoons olive oil
  • 1 kg of beef - cut into cubes
  • 1 onion
  • 2 carrots
  • 2 stalks of celery (celery)
  • salt and pepper
  • 2 cloves garlic - pressed
  • 2 tablespoons tomato paste
  • 6 teaspoons beef broth
  • 1 can (800 grams) chopped tomatoes
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 4 sprigs of parsley
  • 3 potatoes
  • 1 cup frozen peas

Method of preparation :

Finely chop the onion and the celery and carrots into slices.

Put 1 tablespoon of olive oil in a saucepan. Add the meat and fry for 10 minutes until browned on all sides (work in batches if necessary). Put the fried meat on a plate.

Add the remaining olive oil and fry the onions, carrots, celery until soft. Season with salt and pepper. Put the garlic and tomato paste in the pan and a minute later, after they release their aroma, add the broth.

Add the canned tomatoes, Worcestershire sauce and spices.

Bring the stew to a boil, then reduce the heat. Season with salt and pepper, simmer the stew for 2 1/2 hours until the beef is fully cooked.

Add the sliced ​​potatoes and let the stew cook for another 30 minutes until the vegetables are soft.

Remove the parsley twigs and bay leaf. Put the frozen peas, cook until warm for 2 minutes and remove from the heat.

Garnish with fresh parsley when serving.
