How To Cook Stewed Cauliflower In Cream Sauce With Garlic - Recipe

Required products :

  • 400 grams of cauliflower
  • 1/2 bunch green onions
  • 1 carrot
  • 4-5 cloves of garlic
  • 50 grams of butter
  • 1 1/2 tablespoons flour
  • 2 tablespoons cooking cream (33% fat)
  • 1 / 2-1 bay leaf
  • black peppercorns, dill and salt to taste


Method of preparation :

Wash the cauliflower under running water (cold) and divide into small inflorescences. Put them in a saucepan and pour water (again cold), which should only cover the vegetables (about 1.5 liters).

Put half or one bay leaf, black peppercorns and salt. Once the liquid boils, cook the cabbage for 5 minutes on low heat (do not boil the cauliflower, the roses should not fall apart).

Remove with a slotted spoon, place on a plate, strain the broth and allow to cool.

Put the flour in a bowl, add the crushed garlic and pour the cream.

Cut green onions and carrots into large pieces and put in a blender, grind them, but not too finely.

In the bowl with the flour, cream and garlic, gradually pour the already cooled water in which you blanched the cauliflower. Stir with a wire whisk to avoid lumps. The mixture should have a slightly thick consistency, it will thicken more during cooking. In case your combination is too thick, dilute with cabbage broth.

Pour the vegetables into the sauce, add salt, ground black pepper and stir.

Pour the cauliflower into the pot in which you will stew. Drizzle with the sauce and add the diced butter. Stew over low heat for 25-30 minutes under a lid.

Serve the dish sprinkled with chopped dill.
