How To Cook Stewed Potatoes With Olives, Tomatoes And Garlic - Recipe

Required products :

  • 1 onion
  • 4 tomatoes
  • 3 cloves garlic
  • 750 grams of potatoes
  • 41/2 tablespoons olive oil
  • 1 teaspoon dried oregano and other spices to taste
  • 3 small bay leaves
  • 1 tablespoon tomato paste
  • 200 grams of pitted olives
  • feta cheese

 

Method of preparation :

Peel onions and garlic, cut them into circles. Cut the tomatoes and peeled potatoes into 4 pieces.

Heat 4 tablespoons olive oil, pour in onion, oregano and garlic. Season to taste and stew for 4-5 minutes.

Then add the tomatoes and potatoes to the bowl, add the bay leaves, tomato paste and mix gently.

Pour water over the vegetables, cover with a lid and simmer for between 20 and 30 minutes.

Finally add the olives and 10 minutes later the dish will be ready. Meanwhile, stir periodically - the potatoes will soften and the sauce will thicken.

Before serving, add the feta cheese, sprinkle with oregano and sprinkle with olive oil.
