Required products :
- 2 medium-sized potatoes, baked / about 250 grams each /
- 1/2 tablespoon olive oil
- 200 grams of minced sausages
- 2 eggs at room temperature
- 1/4 tea cup grated yellow cheese
- fresh parsley
Method of preparation :
- Preheat oven to 180 degrees.
- Cut the lid of the potatoes and carve the inside. If they have cooled, preheat them in the oven before filling.
- Heat olive oil in a large skillet over medium heat.
- Peel the sausages and fry them for a few minutes, using a wooden spoon to break them into small pieces.
- Distribute them in the potatoes and lightly press the filling.
- Beat one egg at a time and sprinkle with grated yellow cheese.
- Coat the potato peel with melted butter and bake for about 18-20 minutes until the cheese is melted and the yolk remains slightly loose.
- Serve warm, sprinkled with fresh parsley.
