Cut the lids of the loaves and carve the inside. Heat the butter in a pan and fry the onion together with the finely chopped spinach.
Add the bacon and season with salt and pepper to taste. Cool the filling, combine it with the beaten eggs, stir and fill the buns. Sprinkle each with yellow cheese.
Mix olive oil with garlic and spread the bread with the mixture. Preheat the oven to 190 degrees, arrange them in a parchment-lined pan and bake for 20 minutes. Serve warm and enjoy.
