Turn the oven to maximum. Peeled mushrooms, place in a tray lined with baking paper, with the inside facing up. Sprinkle with salt, pepper and a spoonful of olive oil.
Cut onions into freckles. In a large skillet, heat a tablespoon of the fat and add the onions and peppers, season with salt and pepper. Stir often for 5 minutes, until the vegetables change slightly. Take them out on a plate.
Pour the remaining olive oil into the pan and increase the heat to a high degree. Cut the meat into small pieces and season. Fry the pieces of meat on each side for 3 minutes. Turn off the heat and return the vegetables to the pan, mix well.
Fill each of the mushrooms with the mixture and cover with a slice of provolone cheese. Bake in the oven for 20 minutes until it melts and the peppers become soft. Finally, sprinkle with chopped parsley and serve.
