How To Cook Stuffed Tomatoes With Rice, Onions And Olives - Recipe

Required products :

  • 6 large tomatoes
  • 1 tablespoon cold pressed olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, pressed
  • 1/2 teaspoon olives, chopped
  • 1/4 tea cup fresh parsley, finely chopped
  • 1/3 tea cup of rice
  • white wine, vegetable broth or water
  • salt and freshly ground black pepper

Method of preparation :

  • Preheat the oven to 180 degrees and grease a pan measuring approximately 23 centimeters.
  • Wash the tomatoes and cut a cap about 1 cm thick.
  • Carefully carve the inside, leaving about 5 millimeters from the wall.
  • Drain the meat and set the tomato juice in a glass.
  • Heat olive oil in a deep frying pan over medium heat.
  • Add the onion and garlic and saute for 3 minutes until soft.
  • Add the separated tomato meat, olives and parsley.
  • Add the rice, stir and cook for another 1-2 minutes.
  • Pour wine, vegetable broth or water into the glass with the tomato juice until you fill 2/3 of it.
  • Add to the pan, stir and bring to a boil.
  • Reduce the heat, cover with a lid and simmer for 15-20 minutes. Season with salt and freshly ground black pepper.
  • Arrange the tomato cups in the prepared pan and distribute the filling.
  • Put the lids on and bake for 20-25 minutes.
  • Serve the stuffed tomatoes warm or at room temperature.
