Required products :

1 teaspoon quinoa, raw
2 teaspoons filtered water
200 grams of fresh apricots, halved and cut into thin slices
1 cup cucumber, cut into slices
1/2 cup zucchini, finely chopped
1/3 cup fresh parsley
1/2 cup raw almonds, finely chopped
1/4 tea cup olive oil
2 tablespoons apple cider vinegar
1 teaspoon sea salt
1 orange, freshly squeezed
1 teaspoon saffron
1 clove of garlic, pressed

For garnish :

fresh parsley
almonds, chopped in bulk

Method of preparation :

Boil the quinoa in boiling water for about 25 minutes. Allow to cool.
In a small bowl, combine olive oil, orange juice, apple cider vinegar, sea salt and saffron. Stir.
Combine all ingredients in a large bowl, sprinkle with orange dressing and stir.
Garnish the salad with fresh parsley and chopped almonds and serve.
