How To Cook Syrupy Walnut Cake With Cognac, Cinnamon And Orange Peel - Recipe

Necessary products

For the cake:

400 grams of chopped walnuts
1 teaspoon grated nutmeg
180 grams of breadcrumbs or crushed biscuits
1.5 teaspoon ground cloves
20 grams (4 teaspoons baking powder)
200 grams butter
2 teaspoons ground cinnamon
170 grams sugar
7 eggs and divide yolks)
1/3 teaspoon cognac (75 milliliters)
peel of 1 orange


For the syrup:

2 teaspoons water
1 teaspoon vanilla extract
1 tablespoon freshly squeezed orange juice
2 teaspoons sugar
1/4 teaspoon cognac


Method of preparation :

Beat the butter with the sugar for 5 minutes, until smooth. Then add the yolks one by one, stirring. Pour the cognac, add the grated orange peel, mix everything and leave the mixture for the moment.

In a large bowl, pour the chopped walnuts, breadcrumbs / crushed biscuits, cinnamon, cloves, nutmeg, baking powder and mix the products with a spoon.

Combine the two prepared mixtures, mix thoroughly, being careful not to crush the pieces of nuts.

In a separate bowl, beat the egg whites with a pinch of salt until "thick peaks". Use a mixer for this purpose.

Mix them with the "dough" and mix with light circular motions from the bottom up.

Grease a form with a diameter of 30 centimeters and pour the mixture into it. Bake in a preheated 170 degree oven for about 35 minutes. While the cake is cooling, make the syrup.

In a small saucepan pour the water, add the orange juice, vanilla extract, cognac and sugar. Stir until the sweet crystals are melted.

Pour the hot syrup over the dessert, decorate with pieces of walnuts and serve.
