Required products :

  • 1 cup crushed feta cheese
  • 250 grams of ricotta cheese
  • 3/4 tea cup grated Gruyere cheese
  • 2 beaten eggs + 1 yolk
  • 1/4 tea cup sour cream
  • a pinch of nutmeg
  • 2 sprigs of fresh rosemary, chopped
  • 1 1/3 tea cup flour
  • 200 grams of cold butter

Method of preparation :

For the dough, mix the flour and 1/2 teaspoon of salt. Rub the butter into the flour between your fingers until crumbs are formed.

Add 1-2 tablespoons of cold water and stir with a spatula to form a ball.

Wrap in foil and leave for 30 minutes.

Knead the dough several times, then roll it out and fold it like an envelope several times. Leave again wrapped in foil for 30 minutes.

Place the dough on a floured surface. Roll out in a circle about 35 cm in diameter and transfer to a greased and floured baking tray. Set aside.

Mix the cheese, beaten eggs, cream, nutmeg and a pinch of salt and pepper. Spread this mixture on the dough, leaving a 5 cm board at the end. Pull out the edges of the dough and lightly cover the filling with them. Sprinkle with rosemary and smear the crust with egg yolk. Cool for 15-20 minutes.

Bake for 25 minutes at 180 degrees, cool for 15-20 minutes before cutting.
