Required products :

  • 100 grams of bacon, cut into cubes
  • 2 carrots, finely chopped
  • 1/2 onion, finely chopped
  • 4 cloves garlic, pressed
  • 1 1/2 tablespoons tomato paste
  • 1 tablespoon flour
  • 4 tea cups chicken broth / or more if needed /
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • 800 grams of canned tomatoes, mashed
  • salt and pepper to taste

For garnish :

  • shredded Bulgarian yellow cheese
  • fresh parsley, finely chopped

Method of preparation :

 

  • Fry the bacon in a large saucepan over medium heat for about 5 minutes until slightly crispy.
  • Add onions, carrots and garlic. Stir and cook for about 8-9 minutes until softened.
  • Add the tomato puree and continue to stir for a few minutes until it starts to brown slightly and caramelize.
  • Sprinkle with flour and cook for another 1 minute.
  • Add the tomatoes, broth, thyme and bay leaf. Once the soup boils, reduce the heat and simmer for about 30 minutes.
  • Puree until smooth, season with salt and freshly ground black pepper to taste and pour into bowls.
  • Sprinkle the tomato cream soup with grated yellow cheese and fresh parsley and serve.
