Required products :

100 grams of bacon, cut into cubes
2 carrots, finely chopped
1/2 onion, finely chopped
4 cloves garlic, pressed
1 1/2 tablespoons tomato paste
1 tablespoon flour
4 tea cups chicken broth / or more if needed /
1/2 teaspoon dried thyme
1 bay leaf
800 grams of canned tomatoes, mashed
salt and pepper to taste

For garnish :

shredded Bulgarian yellow cheese
fresh parsley, finely chopped

Method of preparation :

Fry the bacon in a large saucepan over medium heat for about 5 minutes until slightly crispy.
Add onions, carrots and garlic. Stir and cook for about 8-9 minutes until softened.
Add the tomato puree and continue to stir for a few minutes until it starts to brown slightly and caramelize.
Sprinkle with flour and cook for another 1 minute.
Add the tomatoes, broth, thyme and bay leaf. Once the soup boils, reduce the heat and simmer for about 30 minutes.
Puree until smooth, season with salt and freshly ground black pepper to taste and pour into bowls.
Sprinkle the tomato cream soup with grated yellow cheese and fresh parsley and serve.
