Required products :

  • 1 tablespoon olive oil
  • 2 medium-sized fennel heads, finely chopped
  • 1 large diced onion
  • 1 clove garlic, chopped
  • 1 can of whole peeled tomatoes
  • 2 teaspoons chicken broth (or vegetable)
  • 1/4 teaspoon sea salt
  • a pinch of black pepper

Method of preparation :

Heat olive oil in a pan and fry the fennel, onion and garlic for about 5 minutes, stirring often until soft.

Pour the tomatoes, broth, salt and pepper. Beat the tomatoes with a spoon and bring the mixture to a boil, then reduce the heat, cover and simmer for 20-25 minutes or until the vegetables are soft.

Blend the tomato soup with fennel until smooth and serve with croutons and grated yellow cheese if desired.
