Required products :

  • 2.5 kilograms of tomatoes
  • 3 tablespoons olive oil
  • 2 medium onions
  • 4 cloves garlic
  • 1 teaspoon dried basil, thyme and oregano
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1-2 teaspoons sugar (optional)
  • 2 tablespoons tomato paste

Method of preparation :

Bring water to a boil in a large saucepan. Make a small X on the underside of each tomato and put it in boiling water for about 1 minute. Remove the tomatoes in ice-cold water, let stand for a while, their skin will begin to peel off.

Peel the tomatoes and cut them into cubes.

Finely chop the onion and fry it in olive oil in a large saucepan until browned.

Squeeze the garlic cloves and add them to the onion, after a minute add the tomatoes and spices, except for the salt, pepper and sugar (if using).

Let the sauce simmer for 2 hours on low heat. Season with the remaining spices and puree until smooth.

Store the sauce in bottles in the refrigerator for up to 3 days, or frozen for 6 months. You can preserve it.
