How To Cook Tomato Risotto With Sausage - Recipe

Required products :

  • 1 can of 800 grams of chopped tomatoes
  • 4 tea cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 500 grams of raw sausage
  • 1 onion, finely chopped
  • 2 tea cups rice (arborio)
  • 1/2 tea glass of white wine
  • 1 tea cup grated Parmesan + more to serve
  • 1 tablespoon butter
  • 1/2 cup basil leaves
  • salt and pepper


Method of preparation :

Pour the can of tomatoes and broth into a saucepan and simmer on low heat.

Heat oil in a large skillet (or saucepan). Chop the sausage and fry it, stirring occasionally. Cook for 10 minutes, until the meat is fully cooked. Transfer the sausage to kitchen paper and pour out the fat, keeping 1 tablespoon in the pan.

Add onion, season with a pinch of salt and pepper and simmer until soft. Add the rice and stir to cover well with the fat. Fry it for 2 minutes until translucent.

Pour the wine into the pan and simmer, stirring constantly, until the liquid has evaporated almost completely (about 3 minutes). Start adding gradually from the tomato mixture, stirring constantly. Add each next ladle of tomatoes after the previous one has been absorbed by the rice.

Continue to add the broth until the rice is cooked and you get a creamy texture. After about 12 minutes, start trying to check if the rice grains are cooked. Within about 20-30 minutes the dish should be ready, the rice should be cooked and the consistency of the dish should be creamy.

 

Remove from the heat and add the parmesan and butter, stir and add the sausage and basil. Season with salt and pepper, serve, sprinkling each portion with a little more Parmesan cheese.
