Required products :

For the marshes :

  • 3/4 cup finely grated carrots
  • 1 cup fine oatmeal
  • 6 pitted dates, cut in bulk
  • 1 tablespoon coconut oil
  • 1 tablespoon water
  • 1/2 cup coconut shavings
  • 1 teaspoon mixture of cinnamon, ginger, cloves and nutmeg powder
  • pinch of salt

For cream :

  • 1 teaspoon cashews soaked for at least 4 hours
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 tea cup coconut oil
  • pinch of salt

Method of preparation :

  • Grind the oatmeal in a blender until fine flour.
  • Add the dates, coconut oil and water and mash again.
  • Transfer the mixture to a large bowl, add the grated carrots and stir.
  • Sprinkle with the aromatic mixture of spices, salt and coconut shavings.
  • Knead the dough thoroughly, use your hands.
  • Take it out on a clean and flat surface and press it with your palms to a thickness of about 1 centimeter.
  • Use a jar to cut 8 circles, which will actually be the tops of the cake.
  • Rinse the soaked cashews and drain.
  • Pour it into the blender and add the maple syrup, vanilla extract, coconut oil and salt. Strain until smooth cream.
  • Assemble the carrot cake, spreading 1/2 of the mixture over 4 loaves.
  • Cover the cream with the remaining circles and spread the rest of the cream on them.
  • Sprinkle with walnuts and serve with a smile! :)
