Required products :

  • 250 grams of dried white beans
  • 400 grams of frozen peas
  • 400 grams of frozen corn kernels
  • 500 grams of fresh spinach
  • 3 medium carrots
  • 2 cloves garlic
  • parsley
  • 2 sprigs of thyme
  • 1 teaspoon curry powder
  • a little olive oil, salt and pepper

 

Method of preparation :

Soak the beans for 4 hours in cold water, which then drain, pour the beans clean, add the stalks of thyme and parsley (separate the leaves of the latter) and cook until cooked (about 1.5-2 hours).

Drain the broth, remove the stalks and cool the beans.

Bake the carrots, wrapped in foil, at 180 degrees in the oven for half an hour (they should soften).

Rinse them with cold water and peel, then cut into cubes.

 

Pour the frozen peas and corn separately with boiling water for 5 minutes, drain the liquid with a colander.

Mash the beans and peas until you get a puree, to which you add the crushed or finely chopped garlic.

 

Cut the spinach and parsley leaves, fry them in a little olive oil together with the curry.

Arrange all prepared products in layers in a cake pan with parchment. The first and last row should be peas and beans.

 

Cover the dish with foil and bake the dish for half an hour in the oven (180 degrees).

Cool before serving.
