How To Cook Wheat With Baked Sweet Potatoes And Brussels Sprouts - Recipe

Required products :

  • 500 grams of Brussels sprouts, cut in half
  • 350 grams of sweet potatoes, peeled and cut into small cubes
  • 2 large onions, peeled and thinly sliced
  • 3 tablespoons melted butter
  • 1 tablespoon curry powder
  • 3 cloves garlic, chopped
  • 1/2 teaspoon black pepper
  • 1 teaspoon sea salt
  • 4 cups + 1 tablespoon water
  • 1 and 1/2 cups raw wheat, rinsed
  • 1/2 cup full-fat yogurt
  • 1 tablespoon lemon juice
  • 3/4 cup roasted pecans (or walnuts)

* A tea cup is used to measure the quantities.

Method of preparation :

Preheat oven to 220 degrees.

Mix in a large bowl the Brussels sprouts, sweet potatoes, onions, butter, curry, garlic, red pepper and 1/2 teaspoon of sea salt. Arrange the vegetables in a large pan covered on the bottom with baking paper. Bake for about 20-25 minutes or until vegetables are soft and lightly browned.

Pour 4 cups of water and 1/2 teaspoon of sea salt into a saucepan and bring to a boil. Add the wheat and cook according to the instructions on the package, then drain.

Mix in a bowl the yogurt, lemon juice and 1 tablespoon of water.

Serve the hot wheat in 4 plates, distribute the vegetables, pecans evenly and garnish with the milk sauce.
