Wash and cut the two tomatoes into circles, yellow cheese (choose hard type) grate.
Beat the three eggs in a bowl, season them, add the yellow cheese, milk and beat well.
Heat your favorite fat in a pan and arrange the tomato rings. Fry them over medium heat for a minute on each side. Then pour the combination of eggs and yellow cheese over them, close the pan with a lid and reduce the heat to a minimum.
Bake the omelette until ready (about 3-4 minutes), and before serving, sprinkle with chopped fresh parsley.
