Champignons are a very popular type of mushroom among culinary specialists all over the world. They are also called "forest meat". Sometimes champignons are indeed equated in nutritional properties with meat, and due to this they are often used as food by vegetarians.

Mushrooms do not contain fats and sugars, so even people with diabetes can consume them. When buying, choose young champignons that are white or slightly pink in color.
Mushrooms should be elastic and in no case have a sour smell. Mushrooms should not have dark or dry spots, they should have a pleasant mushroom aroma. Do not soak mushrooms before frying - they quickly absorb water and become loose, watery and tasteless.
Recipes with fresh champignons
Step 1
For work, we need fresh champignons - 300 g, onions - 1 piece, sunflower oil - 2 tbsp. l., salt - 0.5 tsp, pepper - 0.2 tsp, dill and parsley, knife, kitchen board, clean kitchen sponge.
Step 2
Using a dry sponge, thoroughly clean the mushrooms from contamination. Before frying, it is better not to wash the champignons, but after cleaning, very dirty ones, quickly rinse under running water and dry them on a kitchen towel before frying.
Step 3
Peel the onion and cut into small cubes. Fry in vegetable oil until lightly translucent.
Step 4
Cut mushrooms into slices 0.5 cm thick.
Step 5
Add the prepared mushrooms to the onions.
Step 6
Fry over medium heat without a lid for 10 minutes. Add salt and pepper.
Step 7
Lastly, add the chopped herbs. Mix.
Step 8
Fried mushrooms are ready.
