Ramen with chicken

 

This is a fairly simple and quick recipe, as the breast only takes about 20-25 minutes to cook.

Ingredients:

Chicken fillet - 2 pcs.; Noodles - 1 pack (70 g); Egg - 2 pcs.; Greens - 1 bunch (spinach, onion, Beijing cabbage leaves); Soy sauce - 50 g; Fish sauce - 30 g; Chili pepper - to taste.

First you need to cook the broth and separately boil soft-boiled eggs.

Wash the chicken breast, pat dry and place in a pot of water. After boiling, salt a little and cook until soft. Carefully remove the fillet, and strain the broth if desired.

Pour soy and fish sauce into the broth, lay out the noodles. Bring to a boil, add chili to taste, herbs and sliced ​​chicken. After a minute, remove the soup from the heat, add all the ingredients to the plate and put the halved egg. Serve hot.

Ramen with three broths

 

This recipe is not for those who like quick meals. But if you want to cook a truly unusual, hearty and incredibly fragrant thick soup, then remember the recipe.

We will need:

Pork - 400 g; Chicken drumsticks - 200 g; Vegetable oil - 1 tbsp. l.; Ginger - 1 piece (5-6 cm); Garlic - 1 head; Green onions - 1 bunch; Soy sauce - 100 ml; Rice wine - 50 ml; Dried fish fillet - 100 g; Ramen -100 g; Nori - 1 sheet; Egg - 3 pcs.; Sesame oil - 1 tbsp. l.; Sprouted mung bean sprouts - 50 g.

To prepare the first broth, fry a piece of pork in a pan with heated oil over high heat until a crust forms. Then transfer the meat to a saucepan, add half the garlic and green onions (only the white part), ginger, soy sauce and pour in the rice wine. Add a couple of liters of water and put on fire. After boiling, remove the heat to a minimum and cook for 2-2.5 hours. Strain the finished broth, and cut the meat into pieces.

The second broth is cooked in a similar way, but with chicken. Combine the garlic, ginger, onion, chicken and soy sauce in a saucepan. Pour in water and cook the drumsticks for about 1.5 hours over low heat. Strain the broth, separate the meat from the bones.

The third broth is fish. To prepare it, pour dried fish with water and after boiling, boil for 5-7 minutes over medium heat.

Hard-boil the eggs, cut the nori into strips with scissors. Combine all 3 broths in a large saucepan, add sesame oil and top with ramen noodles. Then add sprouted sprouts, meat, chicken and fish, nori, chopped green onions. Boil for just a couple of minutes and remove from heat. Before serving, add the boiled egg to the soup.

Vegetarian ramen with mushrooms

 

Vegetable broth is a good alternative to meat broth. You can also add vegetables, mushrooms, and tofu to the ramen.

Ingredients:

Vegetable broth - 1 liter; Noodles - 1 pack (100 g); Mushrooms - 100 g; Spinach - 1 bunch; Canned corn - 100 g; Tofu - 100 g; Soy sauce - 50 g; Miso paste - 10 g; Garlic - 1-3 cloves; Ginger - 1 piece; Rice vinegar - 15 ml; Vegetable oil - 1 tbsp. l.; Sugar and spices - to taste.

First, boil the broth based on your favorite vegetables.

 

Bake tofu in an oven preheated to 200 degrees, adding your favorite spices, until golden brown (25-30 minutes). Mushrooms cut into thin slices and fry until golden brown in a pan with hot oil.

 

Strain the finished broth and put on fire. Add miso paste, garlic, ginger, soy sauce and rice vinegar. You can add some sugar to enhance the taste. Put the noodles into the boiling broth and boil for a couple of minutes until tender. Then carefully take it out. In the meantime, lower the spinach into the pan for a couple of minutes and then pull it out with a slotted spoon.

 

To serve the soup, place the noodles, corn, mushrooms, spinach, and tofu on a plate. Fill everything with broth and try what happened.
