How to melt the butter correctly so as not to overheat it and get an excellent result? The main thing here is to do it on a small fire, constantly stirring and controlling the whole process. Butter begins to melt already at a temperature of 38-40 ° C. Therefore, you should drown it on a minimum fire and remove the dishes from the fire at the moment when 2/3 of the oil is melted. Then it is enough to stir the whole mass well with a spoon or a culinary spatula and the remains will be heated up by themselves, since the mass is already sufficiently heated.
Properly melted butter should have a uniform consistency, with no hard under-melted pieces. You can also quickly melt the butter in the microwave.
