For the winter, tomatoes are fermented, salted, pickled. This is a great appetizer that is especially popular in winter.

Such tomatoes will serve as an excellent addition to dishes of both everyday and festive tables. You can use various recipes for making marinades, but the main ingredients are always: water, salt, sugar, vinegar, spices. As spices, allspice, bay leaf, cloves, garlic, dill, black pepper are most often used.

When pickling tomatoes, consider these tips:

- lay out the tomatoes in jars tightly, but do not press them on purpose;

- vinegar can be added to the boiling marinade at the very end, but it is better to pour it into the jar from above after filling the jar with boiling marinade;

- jars and lids should be washed in advance with soda and sterilized;

- when pickling tomatoes for the winter, you can use the double filling method or sterilization.

Ingredients:
  • Water
  • Bay leaf
  • Allspice
  • Tomatoes
  • Sugar
  • Salt
  • Table vinegar 9%
  • Garlic
We will need:
  • Pot
  • jar with lid
  • A spoon

How to pickle tomatoes step by step instructions with photos

Step 1

 

For work, we need tomatoes - 1 kg, water - 700 ml, salt - 1 tbsp. l., sugar - 2 tbsp. l., table vinegar - 2 tbsp. l., garlic - 2 cloves, allspice - 3 pcs., bay leaf - 2 pcs., saucepan, jar with a lid, spoon.

Step 2

 

Wash jars and lids well with baking soda and sterilize. Put spices on the bottom of the jar: bay leaf, garlic, allspice.

Step 3

 

Tightly fill a jar (1 liter) with well-washed tomatoes.

Step 4

 

Pour cold water in order to determine the amount of water for the marinade per 1 jar.

Step 5

 

Drain the water into a saucepan, add salt and bring to a boil. Boil 1 minute.

Step 6

 

Pour boiling brine over the tomatoes in a jar. Cover with a lid. Leave for 20 minutes.

Step 7

 

Drain the brine. Add sugar. Bring to a boil and boil for 1 minute. Pour the boiling marinade into a jar. Pour vinegar on top. Roll up the lid immediately. Turn the jar upside down, wrap with a towel. Leave for 8 hours.

Step 8

 

Pickled tomatoes are ready.
