Nettle strengthens the immune system, saturates the body with vitamins A, K, E, B, trace elements - iron, calcium, copper, magnesium, etc. It has more carotene than carrots, the content of ascorbic acid is twice as high as lemon and black currant. Nettle and vegetable salad

 

Ingredients:

1/3 of young white cabbage 2 carrots bunch of nettles bunch of chives natural or Greek yogurt/sour cream salt, pepper

Rinse nettles from dust, pour over with boiling water and then transfer to ice water. Pat dry with paper towels, cut and place in a bowl. Peel and grate the carrots, chop the cabbage, chop the chives. Add to nettles, salt, pepper to taste and season with sour cream or yogurt.

In a bowl, beat eggs with milk and salt with a whisk until smooth. Rinse green onions and nettles, dry with paper towels and chop with a knife. Mix greens with egg mass. Grease a fireproof mold with oil and pour out the contents of the bowl. Bake for 15-20 minutes in the oven at 180 degrees until golden brown.

Ingredients:

Ingredients:

Peel the eggs and cut in half lengthwise. Carefully remove the yolk into a bowl and mash with a fork, add mayonnaise, if necessary, salt and pepper. Immerse nettles in boiling water, then put in cold water and drain in a colander. Pat dry with paper towel and finely chop with a knife. Stir the nettles with the yolk mixture and stuff the egg halves.

Risotto with nettle and sorrel

 

Delicate sorrel with sourness perfectly complements the strict taste of dense nettle leaves. As for the amount indicated in the recipe, you should not be too precise. Act on the eye and try! 

Ingredients:

100 g young nettle tops 900 ml chicken or vegetable broth 30 g butter onion, peeled and finely chopped 175 g Arborio rice approx. 50 g sorrel salt, black pepper 50 g hard cheese (parmesan type)

Rinse nettles, cut off dense twigs. Blanch nettles in salted water and drain in a colander. Plunge into cold water, then wring out with your hands and chop finely.

Warm the broth, but do not bring to a boil, then leave over low heat. In a large cast iron skillet over medium heat, melt the butter and fry the onion, stirring occasionally, for 8-10 minutes, until translucent. Add rice, stir, pour in a third of the broth and bring to a light boil. Cook, stirring occasionally, until almost all of the broth has been absorbed. Then add chopped nettles and some more broth. Thus, constantly add the next portion of the broth when the previous one is almost absorbed, and do not forget to stir. In total, it takes 20 minutes to cook the rice to al dente. The texture of the risotto at this point should be creamy and fluffy. Perhaps all the broth will not be needed.

Add washed and chopped sorrel, salt. You can add a little more butter and sprinkle with cheese. Cover, let sit for a couple of minutes, then stir. Serve immediately, enjoy!

Homemade bread with nettle

 

From the indicated amount of ingredients, you will get two small loaves of bread.

Ingredients:

600 g flour 1 tsp salt 10 g fresh yeast 400 ml warm boiled water 1 tsp. sugar 100 ml olive oil 75 g nettle leaves (collect with gloves!) coarse salt 

In a large bowl mix flour and salt. Place yeast in warm water, add sugar and stir until dissolved. Leave for 10 minutes. Then make a hollow in the flour, pour the yeast into it, sprinkle with flour and leave for 10 minutes until foam forms. Add 3 tbsp. l. olive oil and knead the dough. Shape the dough into a ball, place in a bowl and cover with cling film. Leave for an hour until the dough doubles in size. 

Rinse nettles, dry with paper towels and tear off the leaves, discard the twigs. Be sure to wear gloves! Once the dough has risen, knead the leaves into it. Divide the dough into two parts, form two balls, sprinkle with flour. Place on a parchment-lined baking sheet, brush with the remaining olive oil and sprinkle with coarse salt. Leave for 15 minutes. Turn on the oven at 220 degrees, when it heats up, lower it to 180 degrees and place a baking sheet with loaves. Bake for 20-24 minutes. Cool before serving.

You can make nettle juice from the plant alone, or you can mix it with water.

Nettles should be washed from dust, damaged and twisted leaves should be removed, dried with a paper towel, chopped and slightly heated in a pan. When the nettle wilts, the leaves must be beaten with a blender and squeezed with gauze.

In a blender, it is convenient to beat nettles with water. Combine two glasses of clean nettle leaves with a glass of water and whisk. 

Jellied pie with cottage cheese and nettle

 

Dough Ingredients:

180 g flour a pinch of salt 80 g butter 2 tbsp. spoons of water

Filling Ingredients:

2 minced nettle leaves 450 g cottage cheese 2 eggs 1 egg yolk salt, black pepper 75 g grated Gouda cheese sesame seeds (optional, for sprinkling the mold) Prepare the dough. In a bowl, sift the flour with salt, add the butter cut into pieces and knead with your hands into crumbs. Gradually add water so that the dough becomes a homogeneous consistency. Then roll the dough into a ball, wrap with cling film and refrigerate for an hour. While the dough is chilling, prepare the filling. Rinse nettles from dust, shake, set aside a few leaves for decoration. Blanch in boiling salted water, drain in a colander, then plunge into cold water. Dry on paper towel and chop coarsely. Whip the cottage cheese with eggs and yolk with a blender, add salt and freshly ground pepper, nettle. Stir with a spoon. Turn on the oven to heat up to 200 degrees, grease a round shape with butter (diameter - 20 cm) and sprinkle with sesame seeds (optional). Roll out the dough into a circle and put in a mold, making high sides. Pour the curd mass and sprinkle with grated yellow cheese. Bake 35 minutes. 

Fritters with young nettle

 

Make savory or sweet pancakes with nettles! It is not necessary to scald the nettle for pancakes, because in the process of frying it will lose its "thorniness". Cook your favorite dough or according to our recipe, then add chopped herbs to it, fry in oil. Serve with sour cream and/or jam.

Throw a few clean leaves or a sprig of nettle into a cup, pour boiling water over it and let it brew for 5 minutes. Cool, add honey and enjoy! Nettle twigs without damage can be dried and made tea in winter.
