Salad with pumpkin


Prepare an unusual salad with grilled pumpkin, spicy cheese and pine nuts.

a couple of handfuls of fresh spinach; 200 g of peeled pumpkin; 50 g hard cheese (parmesan); a couple of spoons of pine seeds; a couple of tablespoons of olive oil; salt, ground black pepper to taste.

Pumpkin stuffed with chicken


For this dish you will need boiled or baked chicken, or you can take grilled or smoked chicken - the taste will be even richer. Cooking stuffed pumpkin along with baking will take just a little over an hour.

You will need:

small spaghetti pumpkin; chicken fillet ready (boiled); 200 g of hard cheese; 70 ml of sour cream and tomato sauce; half sweet pepper; a blue onion or a bunch of green onions; salt, black pepper to taste; a couple of tablespoons of vegetable oil.

Cut the pumpkin in half, scrape out soft fibers with seeds with a spoon, brush inside and out with vegetable oil. Bake in the oven at 200 degrees for 30-35 minutes. Then let it cool down a bit.

Divide the boiled chicken into fibers, grate the cheese, peel and finely chop the onion, chop the pepper into cubes.

How to make pumpkin puree? Cut the washed pumpkin into slices of 3 cm thick. Cut out the soft part with the seeds, leave the peel. Place the slices on a parchment-lined baking sheet and bake for 45 minutes in the oven at 180 degrees. Then separate the baked pulp from the peel into a blender and beat. Ready! Store puree in clean jars in the refrigerator for up to 10 days.

We will prepare two types of dough - orange and brown.

For the orange dough, sift 100g flour with 1/2 teaspoon baking powder into a bowl. Beat one egg with 80 g of sugar with a mixer until light foam, pour in 25 ml of vegetable oil, continuing to work with a mixer. Enter pumpkin puree and 100 g of flour, stir well.

Now let's prepare the chocolate brown dough. In a bowl, sift 100 g of flour with half a spoonful of baking powder. Add ginger, cocoa, nutmeg and cinnamon, stir. Beat with a mixer 2 eggs and 120 g of sugar until foamy, gradually add 25 ml of vegetable oil. Then add flour to the liquid mass, stir.

Pour the chocolate dough into a parchment-lined form, orange on top. If you want, you can make a couple of divorces with a spoon or a wooden stick so that the dough mixes in some places.
