Shrovetide treats create a special atmosphere of warmth and joy from the anticipation of spring. Of course, the main delicacy of the coming days is ruddy pancakes. But you can go further and cook snack and dessert pies from them, because pancakes are a wonderful basis for culinary experiments!

Pancake pie with chicken and mushrooms

 

One option for a savory pie is the delicious chicken and mushroom pancake pie.

You will need:

milk - 500 ml, eggs - 5 pcs. (3 pcs. - in the dough, 2 pcs. - in the filling), chicken fillet - 400 g, champignons - 300 g, flour - 200 g, sunflower oil - 2-3 tablespoons, butter - 30 g, onion onion - 1 pc., sour cream - 2 tbsp. l., salt - 1 tsp, allspice (ground) - to taste, garlic - 1 clove, thyme (or other herbs) - to taste.

 

Of course, you need to start with making pancakes. Take the classic recipe as a basis: lightly beat the eggs with a pinch of salt, pour in about a third of the milk and add the flour, mix thoroughly until smooth, gradually adding the remaining milk.

When the dough is well kneaded, pour a couple of tablespoons of sunflower oil into it and mix again.

 

Bake pancakes and start preparing the filling: alternately fry the chicken fillet, cut into medium-sized pieces, mushrooms and onions in a pan.

Using a chopper (processor), prepare a pate mass of meat, mushrooms, onions and garlic, salt it to taste, add salt, pepper, herbs, as well as your favorite spices (optional).

Now the most interesting part is the formation of the pie. Take a deep baking dish and grease it with butter. Lay out the bottom of the form with pancakes (5-6 pieces) overlapping, leave the edges hanging over the sides.

 

Roll the remaining pancakes into rolls, putting the filling prepared earlier in the center. Place the pancake rolls in layers in the center of the pan and cover with the edges of the bottom pancakes.

Prepare the filling from the remaining eggs, sour cream and a pinch of salt, pour over the formed cake.

Place the pancake pie in preheated to 180-200 degrees and cook for 10-15 minutes.

The cake turns out very tasty, satisfying and spectacular in the context. The dish takes a long time to prepare, but it's worth it. Believe!

Pancake snail with minced meat

 

Similarly, you can cook a pancake "snail" with minced meat.

Ingredients:

pancakes - 15 pcs., minced meat - 500 g, onion - 1 pc., garlic - 3 cloves, eggs - 2 pcs. (for filling), milk - 100 ml (for filling), hard cheese - 100 g.

From the rolls stuffed with minced meat fried with onion and garlic, lay out the “snail” in a spiral in one layer.

The filling for this pie can be prepared, as in the first recipe, with sour cream, or replace it with milk, and sprinkle the pie with grated cheese on top. After baking, the "snail" will acquire a golden crisp. Incredibly appetizing!

And you can make it even easier - make a pancake pie without subsequent baking.

Lightly salted salmon is perfect as a filling for it.

Bake pancakes with milk or kefir (whichever you prefer) and then stack them on top of each other, spreading with ricotta and sour cream cream (in approximately equal proportions) and layering with pieces of fish. Optionally, you can add avocado slices to the filling.

Place the resulting cake-pie in the refrigerator for a couple of hours, before serving, decorate with fresh herbs and fish caviar (optional).

And for dessert, try making a delicacy according to a similar recipe - a delicate pancake pie with sour cream.

Cream for such a cake-pie can be prepared from the following ingredients:

sour cream - 350 g (maximum fat content), condensed milk - 350 g (boiled milk can also be used).

It is very simple to do this - you just need to beat the components with a mixer until a homogeneous airy state. To add flavor to the cream, add vanilla essence or a pinch of cinnamon to it.

From pancakes prepared according to your favorite recipe, form a cake by spreading them with cream. Decorate the dessert with chocolate chips, icing or marmalade pieces. Place the treat in the refrigerator for a couple of hours before serving. Happy tea!

Curd filling for pancake pie

 

No less interesting is the option of a dessert pie with curd filling, which is prepared from the following components:

cottage cheese - 500 g, eggs - 2 pcs., cocoa - 1 tbsp. l., blackcurrant (or other berries) - 3 tbsp. l., starch - 2 tbsp. l., sugar - 80 g.

For the base, beat the cottage cheese, eggs and sugar with a blender. Divide the filling into 3 parts. In one, add only starch (1 tablespoon), in the second - berries and starch, and in the third - cocoa powder.

Then form a pie from pancakes according to the principle described in the first recipe (remembering to alternate the toppings), and pour over the filling from one egg and 100 ml of cream.

Bake a pancake pie with cottage cheese filling in an oven preheated to 180 degrees. You will need approximately 25-30 minutes. Serve dessert garnished with icing and fresh berries if desired. This Shrovetide treat will not leave anyone indifferent!
