In August we will go to the forest for porcini mushrooms and lingonberries, we will preserve green beans and cabbage, fry eggplants, enjoy corn, apples, pears, melons, grapes and figs.

Vegetables

In August, eggplants will ripen and corncobs will pour. We will collect or buy at the market, prepare an appetizer and stew from the blue ones, and cook and grill the cobs. Corn with butter and ground paprika is a luxurious and healthy snack! Plus, it's quick to cook. cooking time for sugar cobs is only 5 minutes.

And from eggplant, prepare a popular and beloved snack by many - rolls with cream cheese and garlic. Cut the eggplant into thin strips lengthwise. Fry in a grill pan without oil or in a regular pan with vegetable oil, then place on a paper towel. Mix cream cheese with crushed garlic, chopped walnuts and chopped parsley. Lubricate the eggplant strips with the resulting mixture and wrap with a roll. Pierce with a skewer.

We continue to cut off the elastic heads of cabbage and pickle - with garlic, bell pepper, horseradish, carrots and beets. A simple and quick way to pickle cabbage looks like this. Cut 2 kg of cabbage into large pieces (cut out the stalks!) And put them in clean jars. Boil the marinade from a liter of water, 2 tbsp. spoons of salt and 3 tbsp. spoons of sugar. When it boils, add 100 ml of vegetable oil, after a few more minutes of boiling 2 tbsp. tablespoons of 9% vinegar. Pour the marinade over the cabbage, close the lid and set aside. Store in refrigerator. You can try again in a day!

Instead of onions, add fried leeks to sauces and stews - it is much more tender and textured.

Summer is a great time to lose weight, you can eat more vegetables (especially dark green ones) and move - walk, swim, walk in the forest. But the best assistant in this matter in August is celery. Prepare celery soup for weight loss and eat it several times a week. For the soup, you will need a small celery root and a few stalks, as well as other vegetables - onions, carrots, bell peppers, cabbage, and tomatoes. We cut all the vegetables and cook in vegetable or chicken broth. You should start the process with the roots, and after boiling, add another portion of vegetables, tomatoes at the end. We scroll the finished soup with a blender, enjoy and lose weight.

String beans continue to produce a bountiful harvest, and we offer this simple recipe for a chic side dish. Rinse the beans, if necessary, cut off the tails and place tightly in the pan. Fill with water, salt and put on fire. After boiling, cook for 5-7 minutes, then drain the water, sprinkle the beans with lemon and serve as a side dish or add to salads.

Mushrooms

August is good for quiet hunting. We will collect porcini mushrooms, chanterelles, honey mushrooms, aspen mushrooms. Mushrooms are fried in a pan, can be stewed with cream, and served with boiled potatoes and pickles. Overeating!

And here is the recipe for a universal marinade for mushrooms for the winter. Mushrooms, of course, must be cleaned and boiled, and only then pickled.

For 1 liter of water - 2 tbsp. spoons of sugar, 1 tbsp. a spoonful of salt, 3 tbsp. spoons of 9% vinegar, 4-5 clove buds, 2 bay leaves and an incomplete spoonful of a mixture of black and allspice peas.

Do not forget, after you fill the chopped mushrooms with marinade, the jars must be sterilized for 8-10 minutes!

Fruits and berries

From lingonberries you can cook a wonderful confiture. Rinse and sort out 1.3 kg of lingonberries. Pour into a saucepan and pour a glass of water, cook until the berries soften, then rub through a sieve or beat with a blender. Return to the fire, add 900 g of sugar and cook, stirring, over low heat until the volume is reduced by a third. Pour into clean sterilized jars and seal.

In August, we continue to pick apples and pears, from which we will bake pies and roll juices.

Here is a simple apple and/or pear crumble recipe. Rub with a spoon 200 g of chilled butter, grated, with 100 g of sugar. Add 300 g flour with a teaspoon of baking powder. Knead the dough with your hands, if it is too crumbly, add a little more butter or a spoonful of cold water. The dough should keep the shape of a coma. Wrap in cling film and refrigerate while you peel and chop the apples and pears. Put half of the dough into the form with large crumbs, then a layer of fruit and again the dough. On top, you can still rub a little butter and sprinkle with sugar - for a crust. 30-35 minutes in the oven at 180 degrees and the crumble is ready!

Grapes are good with cheese as an appetizer on skewers, they perfectly complement a salad with chicken or jelly.

And at the party, you can serve grapes marinated in wine. Prepare an original appetizer (or dessert) like this. Pour 3 cups of seedless green grapes with white semi-sweet or dry wine, in which you first dissolve 1/4 cup of sugar. Berries should be immersed in wine. Leave for a day in the refrigerator. Then drain the wine, and dry the grapes slightly with a paper towel, but so that they remain moist. Dip the berries in sugar, dry and put in a container. It remains only to freeze in the freezer and - you're done!

Grilling watermelon and melon is very tasty - just cut into slices and fry on a grill over coals. Then drizzle with syrup or honey and serve with a fresh mint leaf and a handful of berries. Incredible dessert!

Exotic figs are great for a baked goat cheese appetizer. To do this, put the fruit on a baking sheet with the narrow side up, make cross cuts and stuff with goat or other soft cheese. Brush with olive oil, season with a little salt and pepper. Bake for 4 minutes at 180 degrees. Then cool slightly, pour over with honey and - on the table!

Have a good summer, new culinary discoveries and travels!
