1. Snack cake of pancakes with caviar

 

Pancake Ingredients:

300-350 wheat flour; 600-700 ml of milk; 3 eggs; 150 ml of olive oil; 0.5 tsp salt; 1.4 tsp nutmeg; 50 g butter.

Filling Ingredients:

250 g cream cheese; 2 avocados; 100 g spinach; 100 g dill; 200 g of red caviar; slightly salted / smoked salmon or salmon; 1 tsp olive oil; 2-3 pinches of salt; 0.5 tsp Italian herbs.

We knead the dough for pancakes. To begin with, we combine all the liquid ingredients, beat with a mixer, separately combine the dry ones, then fall asleep in portions. We heat the pan well, grease with a small amount of olive oil, fry the pancakes on each side for 2 minutes. Finely chopped spinach or dill can also be added to the dough if desired. We stack the pancakes on top of each other, grease each with butter.

Let's move on to the stuffing. Peel the avocado, remove the pit. Set aside one avocado for cream and cut into medium cubes, knead the second with a fork.

Beat cream cheese and mashed avocado with a mixer until fluffy, add olive oil, salt, Italian herbs and finely chopped spinach to them. Salmon or salmon cut into thin slices. We form a cake. We spread the pancake, grease it with butter cream, add a small amount of red caviar, salmon or salmon plates, sprinkle with dill, repeat the layers until the pancakes run out. Lubricate the last layer with butter cream, decorate with a small amount of caviar and dill.

2. Puff pastry pie with crab sticks and cheese

 

Ingredients:

300 g puff pastry; 300 g crab sticks; 2 medium heads of onions; 100-150 g curd cheese; 3-4 st. l. olive oil; 1/2 tsp turmeric; bunch of parsley; 1/4 tsp chopped coriander; 1/2 tsp dry garlic; salt, pepper to taste; 1 yolk; sesame for decoration.

Cut crab sticks into small cubes, send to a preheated pan with the addition of olive oil. We also add finely chopped onions to them, season everything with turmeric, coriander, garlic, salt and pepper. Fry the filling for about 5-7 minutes, then cool slightly.

Roll out the puff pastry thinly, brush with a little olive oil, spread the fried crab sticks and onions. Then we evenly distribute salted curd cheese, parsley on top, wrap the roll. Lubricate the dough with beaten yolk, sprinkle with sesame seeds, send the dish to the oven preheated to 200 degrees for 30-40 minutes.

3. Snack waffle pie with chicken

 

Ingredients:

10 ready-made round wafers; 300 g curd cheese; 4 things. chicken fillet; 2 carrots; 2 tbsp. spoons of sour cream; 2 tbsp. tablespoons of olive oil; 1/4 tsp ground ginger; 3 art. l. soy sauce; 1/4 tsp (smoked) paprika; 1/4 tsp ground rosemary; coarse-grained cottage cheese for decoration; romanesco cabbage for garnish

Boil the chicken fillet until fully cooked, cut into fibers, transfer to a preheated pan with the addition of olive oil, fry for about 3 minutes. At the same time, we rub the carrots on a coarse grater, transfer it to the chicken, pour everything with sour cream, soy sauce, season with salt, pepper, paprika, ginger and rosemary. You can add liquid honey. Fry the filling for about 10 minutes over low heat, then collect the cake. Lubricate the waffles with curd cheese, then lay out the torn chicken, repeat the layers. Lubricate the edges of the pie with cream cheese or sour cream, and decorate the last layer with salted cottage cheese and cabbage.

4. Swedish snack cake "Smergastorte"

 

Ingredients:

white bread for toast; 300 g cream cheese; 150 g smoked salmon; 150 g shrimp; 50 ml of fish broth; 2 cucumbers; 100 g of arugula; a bunch of dill; salt / pepper to taste; lettuce leaves, eggs, shrimp for decoration.

Cut off the crust from the bread for toast, roll out the pieces a little and put them immediately on a plate to serve the dish. Pour the bread with a small amount of fish broth. Beat the cream cheese a little with a mixer to make the mass more airy, add finely chopped arugula, dill, boiled shrimp, diced salmon, salt and pepper to taste. We cut off the middle with seeds from the cucumbers, finely chop the cucumbers themselves and also send them to the cheese. Mix the filling well, put it on soaked toasts, also cover with a layer of bread on top, pour a little fish broth, grease with cream cheese and decorate the dish with lettuce, eggs and shrimp.

5. Cake "Herring under a fur coat" with pita bread

 

Cake "Herring under a fur coat" can be laid out in the form of a circle or a rectangle, it all depends on how you cut the pita bread. You can decorate the cake with greens, or you can not add greens - the ingredients are bright and look great on their own.

Ingredients:

2-3 sheets of Armenian pita bread; 1.5 pcs. herrings; 2 heads of red onion; 3-4 potatoes; 3-4 eggs; 1 large or 2 small beets; a bunch of cilantro; bunch of parsley.

Boil until fully cooked potatoes, beets and eggs. We cut the potatoes into small cubes, rub the beets on a coarse grater, separate the proteins from the yolks, rub them on a fine grater. We cut the herring, cut into small cubes. Chop red onion, mix with chopped cilantro and parsley.

We cut each pita bread into 2 parts, collect the cake. We put 1 pita bread on the bottom of the plate, grease it with mayonnaise, spread the herring, then again pita bread with mayonnaise, potatoes, pita bread, greens with onions, pita bread, protein and beets. Lubricate the last layer with mayonnaise, decorate with herbs and yolk.

6. Snack cake with crab sticks, rice and vegetables

 

Ingredients:

200 g of rice; 150 g canned corn; 150 g crab sticks; 2 cucumbers; 3 cloves of garlic; 70-80 ml of mayonnaise; salt, pepper to taste; a bunch of dill for decoration; 4-5 pcs. whole crab sticks for decoration; 20 g canned corn for decoration.

Boil rice with salt until fully cooked, cool. Crab sticks are cut into small cubes (if desired, they can be fried), mixed with canned corn, chopped cucumber and rice.

Dress the salad with mayonnaise, add salt, pepper, chopped garlic, put the salad on a flat bowl, crush the edges. We decorate the salad with a lot of dill so that they resemble spruce branches, we insert a few corn sticks. To make corn sticks resemble candles, you can put neat slices of carrots or bell peppers on the end.
