Salad with chicken, mushrooms, carrots - simple, hearty, incredibly beautiful and very tasty!

Salad Ingredients:

400 g chicken fillet; 4 eggs; 350 g of mushrooms (chanterelles, mushrooms, champignons); 2 carrots; bulb; 50 g of hard cheese; 3 art. l. mayonnaise; 2 tbsp. l. vegetable oil; salt, pepper, herbs, poppy seeds to taste; a couple of cranberries or lingonberries.

Boil chicken fillet, eggs, carrots until tender. Finely chop the peeled mushrooms and onions, fry in a pan in vegetable oil until tender. If using wild mushrooms, you can boil them in advance (20 minutes).

Peel the boiled eggs, separate the protein from the yolk. Set aside the white of three eggs, it will need to be grated for decoration. Finely chop the remaining whites and yolks, put in a bowl. Add chopped chicken, mushrooms with onions, mayonnaise, salt and pepper to the eggs, mix.

Grate cheese and carrots separately.

Let's start making the salad. Arrange the mushroom-shaped salad on a large flat platter. Put the leg with protein, the hat with carrots, the inside of the hat with cheese. Sprinkle the leg with poppy seeds and lay out the greens. Put the berries on the hat. Ready!

Rinse vegetables and basil, pat dry with paper towels and peel. Cut the pepper into thin strips, grate the carrots and zucchini for Korean carrots. Chop the basil. Mix peanuts, greens, vegetables in a bowl. In a small bowl, mix soy sauce, lemon juice, crushed garlic, sugar and olive oil. Pour dressing over salad, toss and serve. Enjoy!

5. Pumpkin rolls with liver (budget dish!)

 

From pumpkin, potatoes and onions, fry huge cakes. Wrap grated boiled chicken liver in them and bake with sour cream and cheese. It will turn out incredibly tender, satisfying, unusually tasty dish! Be sure to try!

For pumpkin rolls with liver you will need:

350 g liver (chicken or turkey); 200 g pumpkin pulp; big potatoes; 2 eggs; 2 onions; 40 g butter; 70 g of hard cheese; 3 art. l. sour cream; 3 art. l. flour; 5-8 Art. l. vegetable oil; salt, pepper to taste.

Boil the liver in salted water and cool (you can do this in advance). Then grate. Cut one onion into cubes, fry on softness in butter over moderate heat, add to the liver. Add a spoonful of sour cream there, mix the filling.

Chop the second onion. Grate the peeled pumpkin pulp and potatoes. Beat eggs to potatoes, onion and pumpkin, add flour, salt, pepper. Mix everything well.

Heat vegetable oil in a frying pan (3-4 tablespoons). Put the potato-pumpkin mass in the form of a cake (4 cakes will come out of the indicated amount of ingredients). Fry until golden brown on both sides, a few minutes on each side.

Put the filling on the cakes, tuck the edges and roll up the rolls. Put the rolls in a baking dish, grease with sour cream and sprinkle with grated cheese. Bake in the oven for 20-25 minutes at 180 degrees.

6. Fried tortillas with pumpkin (crunch?)

Tortillas with a crispy crust and spicy filling are an excellent autumn dish for broth. Add hot pepper and garlic to the pumpkin - for a thrill!

For the cakes you will need:

250 g flour; 125 ml of kefir; 250 g pumpkin pulp; bulb; 1 st. l. tomato paste; 30 g butter; 1/2 tsp Sahara; 1/2 st. l. soy sauce; a pinch of ground hot pepper; clove of garlic; 3 art. l. vegetable oil; salt to taste.

Mix the sifted flour with salt, add a tablespoon of oil, add kefir, mixing vigorously. Knead the dough, collect in a lump, cover with a towel and leave for half an hour.

Peel the pumpkin and onion, cut the onion into cubes, grate the pumpkin. Fry the onion in butter in a pan until soft, add pumpkin and simmer for 10 minutes. Then add soy sauce, tomato paste, pepper, salt, sugar, garlic and butter passed through a press. Simmer for another 4 minutes and cool.

Divide the dough into 8 parts. Roll out each piece thinly. Put a couple of tablespoons of filling in the center, cover with a second piece and pinch the edges tightly. Fry the resulting 4 cakes in oil over medium heat until golden brown.

7. Closed pizza with zucchini, mozzarella and olives (straight from Italy)

 

A closed pie or crescent-shaped pizza with zucchini and pickled cheese is called calzone by the Italians. True, sun-dried tomatoes are added to the original filling instead of olives. Do it to your taste.

Calzone Ingredients:

200 g flour; 125 ml of water; 1 tsp salt; 2 tbsp. l. olive oil; 4 g dry yeast; 1/2 tsp Sahara; zucchini; a handful of olives; 150 g mozzarella; 100 g of ham (you can not add); 1 tsp oregano; yolk for lubrication.

Dissolve the yeast in warm water, add sugar and leave for 10 minutes. Or follow the directions on the yeast package. Then add flour, salt, 1 tbsp. l. oils. Knead the dough, gather into a ball, leave under a towel for an hour at room temperature.

Thinly sliced ​​zucchini (5 mm each) mix with the remaining olive oil and oregano. Fry the zucchini in oil until soft. Salt, select on paper towels.

Cut the ham and cheese into thin slices, olives - in half.

Divide the dough into 3 equal parts, roll out circles with a diameter of 20 cm. Place zucchini on one half of each circle, stepping back a centimeter from the edge, then olives, ham and cheese. Cover with the second half of the circle and pinch the edges.

Put the crescents on a baking sheet covered with parchment and bake at a temperature of 240 degrees for 10 minutes. Serve warm.

8. Pumpkin buns with honey (fluffy and fragrant pastries)

Bun Ingredients:

200 g pumpkin puree; 500 g wheat flour; 33 g fresh yeast or 11 g dry; 1/2 tsp. ground cinnamon and ginger; egg; 3 art. l. liquid honey; 80 ml of warm water; 50 g butter; a pinch of salt; a spoonful of honey and melted butter for greasing the buns.

In order to prepare pumpkin puree, you need to bake slices of pumpkin without skin in the microwave for 12 minutes at a power of 900 watts. Then just mash with a fork. You can also boil the pumpkin in a small amount of water or bake in the oven for 20-25 minutes at a temperature of 190-200 degrees.

Melt yeast in warm water. In a separate bowl, mix flour, cinnamon, ginger, salt.

Mix pumpkin puree with egg and honey.

Make a hole in the flour, pour in the yeast and pumpkin puree. Stir, add melted butter, knead the dough. Leave under a towel for an hour.

Lubricate the baking dish with vegetable oil, grease your hands and the table as well. Divide the dough into 12 parts, put the buns in a mold at a distance of a centimeter and a half. Let the buns rise for another half an hour. Then bake the buns for 30 minutes at 180 degrees.

9. Stuffed zucchini (baked boats with meat and rice)

Ingredients for Stuffed Zucchini:

2 zucchini; 300 g ground beef; bulb; 1/2 cup rice; 2 tbsp. l. tomato sauce; salt, pepper to taste; a spoonful of ucho-suneli or spices to taste; 1 st. l. vegetable oil; 200 ml of meat broth; 120 g of hard cheese; Bay leaf; a pinch of dried thyme; bunch of dill.

Boil the rice in a glass of water until tender (20 minutes), drain on a sieve. Rinse the vegetables, peel the onion and cut into cubes. Fry the onion in oil until soft. In a bowl, mix minced meat, fried onion, rice, salt, pepper, tomato sauce, suneli.

Cut the zucchini in half lengthwise, scrape out the soft part with a spoon. Put the boats on a baking sheet and stuff with minced meat. Pour the broth into the pan, add bay leaf and thyme to it. Bake stuffed zucchini in the oven for 35 minutes at a temperature of 180 degrees. Then sprinkle with grated cheese, raise the temperature to 200 degrees, and bake for another 15 minutes.

400 g pumpkin pulp; 100 g curd cheese; 50 g arugula; 2 tbsp. l. pine nuts; 3 art. l. olive oil; 30-40 g butter; salt, pepper to taste.

Clean the pumpkin and cut into small cubes. Place on a parchment-lined baking sheet, drizzle with oil, and lay out slices of chopped butter. Bake for 20 minutes in the oven at 200 degrees.
