Spices prevent tissue damage and inflammation caused by high blood sugar, say US scientists.


 
When blood sugar is high, a process called protein glycation begins. In it, the sugar binds to the proteins and the so-called end products of advanced glycation are obtained. They activate the immune system, inflammation and tissue damage begin, which ages them.


 
A team from the University of Georgia found a link between the phenol content of 24 spices and their ability to stop the formation of end products of advanced glycation. Spices such as cloves and cinnamon contain phenols, which are 30% and 18% of their dry weight, respectively. Oregano contains 8% phenols and sage - 6%. For comparison - blueberries, which are praised for their content of antioxidants, contain 5% phenols in dry weight. Different phenols are absorbed by the body differently and have their own mechanism of action. Therefore, scientists recommend using a variety of spices.
