Pizza is a favorite treat for children and adults. For many, a Saturday trip to a pizzeria has become a good family tradition. But juicy and hearty pizza is not difficult to cook at home. And today we will talk about the main secrets of making different types of pizza dough and share great recipes.
Real pizza is always prepared on a yeast-free dough. It can be cooked in water or kefir. But the lowest-calorie option is yeast-free dough on water.
For test:
flour - 500 g (it is better to use premium flour); eggs - 2 pcs; water - 200 ml; vegetable oil - 2 tablespoons; salt - to taste.
For filling:
tomato sauce - 200 ml; hard cheese - 500 g; sausages - 500 g; olives - to taste.
Sift flour and mix it with salt. Form a mound of flour with a small indentation in the center. Crack the eggs into the well and mix everything. Then add warm water and vegetable oil. Knead the resulting dough thoroughly with your hands for 6-10 minutes. If the dough seems too sticky, add some flour.
Before baking, the dough should be covered with cling film or a towel and left for half an hour in a warm place.
When the dough is infused, you can proceed to the filling. You can make one large rectangular or round pizza. Or you can make several small pizzas by dividing the dough into balls, each of which is rolled out with a rolling pin. Lubricate the surface of the rolled dough with tomato sauce, put the sausage cut into pieces, olives. Sprinkle generously with grated cheese on top. The more cheese there is, the juicier the pizza will be. Bake in the oven for half an hour at 180 degrees.
Garnish with sprigs of fresh herbs before serving.
Note to the owner:
Vegetable oil is necessary to make the dough more elastic. For pizza, use olive oil. When leaving the dough, it must be covered with a towel to limit contact with air. If the dough is very weathered, it will lose its elasticity and it will be difficult to roll it into a thin layer. You can use this yeast-free dough recipe not only for pizza, but also for pies or dumplings. If you want to make sweet pastries based on it, add sugar to the dough to taste. Ready-made yeast-free dough can be stored in the refrigerator for a week, after wrapping it with cling film.
For filling:
ham - 150 g; chicken breast - 100 g (boiled); mozzarella - 50-100 g; hard cheese - 100 g; tomatoes - 1 pc; olive oil - 2 tbsp; fresh herbs - 3-4 branches; salt, spices - to taste.
For test:
flour - 2 tbsp.; dry yeast - 2 tsp; olive oil - 1 tbsp; water - 100 ml; salt - to taste.
Let's take a test. To do this, dissolve the yeast in warm water. Add flour and vegetable oil, and knead the dough well with your hands. Cover the dough with a towel and leave in a warm place for 2-3 hours.
During this time, prepare the filling. Ham, chicken breast, mozzarella and tomatoes cut into cubes. Grate hard cheese. Mix all ingredients in one bowl. Add salt, spices and olive oil.
When the dough has risen, divide it into several balls. Roll each ball into a cake. Put the prepared filling on half of the cake. We close the filling with the open half of the cake and press the edges of the upper and lower layers of the cake to each other.
Bake in the oven at 180 degrees for 20 minutes.
Note to the owner:
Half the water can be replaced with milk or carbonated mineral water. This will make the dough softer. Before adding the filling, the dough can be smeared with tomato sauce.
And finally, let's prepare the classic Italian Margarita. By the way, according to the Italians themselves, this particular recipe is a real pizza, and everything else is the culinary fantasies of the chefs.
Ingredients:
active dry yeast - 40 g; warm water - 250 ml; flour - 375 g; olive oil - 1 tbsp. l.; pizza sauce - 150 g; mozzarella - 250 g; tomato - 2 pcs; salt - to taste.
Dilute the yeast in 100 ml of warm water and add the sifted flour. We mix everything well. Add olive oil and salt. Gradually add the rest of the water, continuing to knead the dough. Then knead the dough well with your hands. Wrapping the dough with cling film, put in a warm place for 2-3 hours.
When the dough is ready, divide it into two halves. Roll each part into a small cake. Lubricate the surface of the cakes with tomato sauce, sprinkle generously with grated mozzarella on top and spread the tomato slices. Bake for 20 minutes in the oven at 220 degrees. Sprinkle with green basil leaves before serving.
