Tomatoes are best eaten canned. For lycopene - the pigment that gives the red color of tomatoes is believed to protect against several types of cancer , especially prostate and against cardiovascular disease. 
 
Tomatoes that have undergone heat treatment are actually a better source of lycopene than the raw type of fruit. The processing process helps to release more lycopene, which is more easily absorbed by the body. 
 
Like raw tomatoes, canned also provide beta-carotene and  vitamin C .
