Soup for dinner. But I’m already tired of chicken, there’s a lot of fuss with borscht, and children don’t like hodgepodge ... In this case, a simple, quick and very appetizing soup with meatballs will come to the rescue! We offer you several recipes for this easy-to-prepare soup.
Ingredients:
minced meat (pork and beef) - 250 g; potatoes - 4 pcs.; onion - 3 pcs.; carrots - 1 pc.; egg - 1 pc.; salt, herbs, pepper - to taste; vegetable oil for frying.
The first step is to mold the meatballs themselves - small meat balls. For them, you need to knead the “dough”: add a raw egg, salt and pepper to the minced meat to taste. Wash the onion, peel and finely grate to minced meat. We mix everything and from the resulting mass we can sculpt balls.
Let's deal with vegetables: wash the remaining two heads of onions and carrots, peel and also grate, but already on a coarse grater. It is better to cut the onion into small cubes.
In the meantime, we throw our meatballs into a saucepan with already boiling water. It is not necessary to salt it - the meat is already salty. Let the balls boil for 10 minutes to set. While the meatballs are cooking, fry the onion and carrots in a pan until golden brown - 5 minutes will be enough.
Be sure to peel the potatoes, cut arbitrarily. Someone likes straws, someone likes large cubes, and someone even cuts a potato into 4 parts and cooks it in this form. It's all to taste. We throw the potatoes to the meat balls and cook until the potatoes are ready. Please note that coarsely chopped potatoes will take longer to cook than diced ones.
At the end, add our vegetables fried in a pan to the soup and boil for another 10 minutes. That's all! Before serving, it is delicious to crumble fresh herbs into the soup.

This soup has a pleasant tomato sourness and has a fairly rich beautiful color. Unusual version of soup with meatballs.
Let's prepare the meatballs: salt the minced meat, pepper, add the egg. Mix everything and leave to brew for 20 minutes. Then, with wet hands, you can sculpt meatballs. While the minced meat is waiting for its fate in the refrigerator, you can wash, peel and cut the potatoes into large cubes.
We will wash the tomatoes, peel them from the skin - this is a must, in the soup it will boil and it will be unpleasant to prick. Beat the tomatoes in a blender - it is better to use a blender with a bowl for them.
Fry the onion in oil for five minutes, then add the tomato mass and finely chopped or crushed garlic to it and fry on medium heat for another 5 minutes.
Now let's get to the meatballs: it's time to cook. We send rice together with balls into boiling salted water and cook for 10 minutes. Then we send the chopped potatoes there and leave to cook for another 15 minutes. Add vegetables at the end, bring to a boil, boil for 5 minutes and you're done! Very interesting taste!

In this case, let's start with vegetables. Wash potatoes, carrots and onions, peel and cut. Potatoes and onions - in cubes, and half of the carrots - cut into strips. Grate the other half on a coarse grater.
In a pot of boiling water, send potatoes, half an onion and that part of the carrot that is cut into strips.
Salt the minced meat, pepper it, add a couple of tablespoons of finely chopped onion and blind with wet hands from the resulting mass of meatballs. We will send them to a pot of boiling water for 20 minutes.
Let's take mushrooms. Cut the mushrooms into slices, put them in a pan and fry in oil for 7-10 minutes along with the rest of the carrots.
Grate processed cheese on a coarse grater. We send the frying and processed grated cheeses into a saucepan with soup and cook it on the smallest fire for another 10 minutes. Let the cheeses melt. Finely chop the greens and at the end of cooking add it to the soup. The soup is ready!

minced chicken - 400 g; carrots - 1 pc.; potatoes - 3-5 pcs.; vermicelli - 80 g; onion - 1 pc.; vegetable oil - 2 tbsp. l.; salt, pepper, herbs - to taste.
In this case, everything is easier with meatballs - chicken meat is more tender, and nothing needs to be added. It is enough to salt and pepper the minced meat and you can form meatballs. Then we lower them for 10 minutes in boiling and salted water, just like pork or beef.
Let's take care of vegetables - we also clean the carrots and onions and finely chop or grate. Wash the potatoes, peel and cut into cubes - finely chopped potatoes go better with chicken meatballs. Add it to the meat and cook for another 15 minutes.
Let's prepare the frying: fry the onions and carrots in vegetable oil for 3 minutes so that the carrots grab a little. Add stir-fry to soup. We measure the right amount of vermicelli - this is optional, someone likes a thicker soup, someone thinner - and add it to the soup as well. Leave on fire for 5 minutes. The soup is ready!

potatoes - 6 pcs.; minced meat - 300 g; eggs - 3 pcs.; onions - 3 pcs.; butter - 3 tbsp. l.; pepper, salt, herbs - to taste.
This is probably the simplest and most unpretentious version of meatball soup, which is prepared in just half an hour.
Let's prepare the meatballs: as usual, beat an egg into the minced meat, salt and pepper, and make meat balls.
Fry the washed, peeled and finely diced onion for 5 minutes in butter (!) Butter - so it will turn out tender and play well in such a simple soup. Set aside the onion, let it cool.
Wash the potatoes, peel and cut into strips - large slices will not work here, it will turn out empty.
Boil water, salt it, throw the meatballs in there and leave them to cook for 5-7 minutes so that the meat grabs. Add potatoes and onions, if you want - you can add black pepper, and leave on fire for another 15-20 minutes. Before serving, you can decorate the soup with fresh dill and parsley. Simple and appetizing!
