Salads come with a bang during the holidays, and on weekdays a simple lunch is turned into a small feast. We offer a selection of easy-to-prepare, tasty and beautiful salads, the ingredients for which you will surely find in your refrigerator.
We will prepare a salad from boiled rice, canned red fish and an apple. And serve in a plate of puff pastry. Simple and effective!
Ingredients:
200 g canned or baked red fish (trout, for example); 1/2 cup long grain rice; 50 g leeks; Apple; tomato; 250 g puff yeast-free dough; 2 tbsp. l. mayonnaise; salt, pepper, herbs to taste.
Boil the rice in two cups of salted water according to the instructions and set aside.
Turn on the oven to heat up to 190-200 degrees. Defrost the dough on a floured table. Roll out lightly, cut out circles and "dress" on cupcake liners, press down and pinch the edges. If you like, brush the molds with beaten egg yolk.
Bake in the oven for 10-15 minutes until golden brown.
In the meantime, let's prepare the salad. Wash the apple and tomato, grate the apple, cut the tomato into cubes. Chop the leeks and herbs. Throw the trout into a strainer, then mash with a fork. Mix all ingredients in a bowl with mayonnaise.
It remains only to fill the ready-made cooled puff pastry molds and serve.
A juicy and healthy salad can be served with poultry or for dessert.
You will need:
2 sweet and sour apples; orange; 1/2 cup raisins or dried cranberries 1/2 cup walnuts; 1 st. l. wine vinegar; 1 st. l. olive oil; salt, pepper, herbs (mint) to taste.
Soak the raisins in boiling water for 5 minutes. Drain in a colander, then pour in a mixture of vinegar and olive oil. Wash and peel apple and orange. Cut the apple into small slices, peel the orange from the peel and membranes and cut into pieces. Peeled nuts can be fried in a hot pan without oil, and then chopped with a knife. Combine the ingredients, salt, pepper, season with herbs to taste.
Ingredients:
4 eggs; 170 g pasta (horns); 3 pickled cucumbers; small bulb; 1 st. l. Dijon mustard; 3-4 st. l. mayonnaise; salt, pepper, herbs, ground paprika to taste.
Hard boil eggs, cool and peel. Separate the yolks from the whites. Boil macaroni according to instructions. Cut the onion and protein into cubes, cucumbers into strips.
From the yolks, mayonnaise, mustard, spices and chopped herbs, prepare a salad dressing.
Combine ingredients in a bowl and season. Ready! Optionally, such a salad can be supplemented with olives, celery, ham.
Classic Olivier, of course, nothing surpasses, but you can try something new! In addition, Olivier with fish and lean mayonnaise can also be served in fasting. Let's try!

half smoked mackerel; 2 boiled potatoes; boiled carrots; fresh cucumber; pickled cucumber; 3 boiled eggs; 1/2 cup canned peas.
Separate the mackerel from bones and skin, cut into cubes. Peel all vegetables and also cut into cubes. Add peas and season with mayonnaise. Simple and delicious!
Salad can be served in a salad bowl or tartlets. Pomegranate seeds will make the salad luxurious!

250 g of ham; large fresh cucumber; 3 boiled eggs; 30 g walnuts; 30-40 g pomegranate seeds; 2 cloves of garlic; mayonnaise to taste; greens to taste; tartlets (optional, for serving, 6-8 pieces).
Boil the eggs ahead of time and set aside. Cucumbers, ham and eggs cut into medium-sized cubes. Mix in a bowl. Add minced garlic. Finely chop the nuts, add to the rest of the ingredients. Season with mayonnaise, herbs, mix. Serve in a salad bowl or tartlets. Enjoy!
This salad can be seasoned with sour cream, mayonnaise or vegetable oil. It can be served with meat and poultry, and as a light independent dish for dinner, for example.
Ingredients:
300 g of Beijing cabbage; Apple; carrot; 1 tsp lemon juice; dried fruits to taste; 2 tbsp. l. sour cream, mayonnaise or vegetable oil.
Wash vegetables and apple. Chop the Beijing cabbage, cut the apple into strips and sprinkle with lemon juice, grate the carrots. Dried fruits pour boiling water, leave for 10 minutes, then drain and cut into strips. If you have dates, choose the pits. Mix all the ingredients in a salad bowl and season to taste with sour cream, mayonnaise or vegetable oil.
Delicious and bright salad for the holiday!
Ingredients:
one duck breast; 70 g of Adyghe cheese (or any other pickled cheese); pear; small bulb; 2 tbsp. l. dried cranberries; 1 tsp mustard; 5 st. l. orange juice; 3 art. l. soy sauce; 2 tbsp. l. olive oil; 1 tsp orange peel; 1 tsp mustard (grained); black pepper to taste.
orange juice and 2 tbsp. l. mix soy sauce in a bowl and put in it the onion cut into thin rings. Marinate for 30 minutes.
Combine the remaining soy sauce, mustard and olive oil. Put the breast in a heat-resistant form on the foil, make the sides. Pour the prepared sauce over the breast (two tablespoons are enough, leave the rest for dressing the finished salad). Bake for 30 minutes at 200 degrees. Then cool and cut into slices.
Cut the pear into thin slices, chop the nuts, cut the cheese into pieces. Put the ingredients on a plate, add pickled onions, sprinkle with cranberries and nuts, pour over the sauce. Delicious salad is ready!
For salad we use beans, beets, carrots and onions. Herring can be chosen both cold and hot smoked.
Ingredients:
250 g smoked herring; 2 boiled beets; 100 g carrots (fresh or frozen); 100 g green beans (fresh or frozen); bulb; a handful of spinach or other greens (optional) 1 tsp balsamic vinegar; 3 art. l. sour cream or mayonnaise; 1 tsp Dijon mustard; 1 tsp chili sauce; a pinch of dried thyme; salt, black pepper to taste.
Boil vegetables until tender. Clean and cut into strips. Cut the peeled onion into thin half rings and marinate in balsamic vinegar. Cut the smoked herring, remove the skin and bones, cut into pieces.
For dressing, mix sour cream with mustard, chili sauce, chopped herbs, pepper, thyme.
Mix all ingredients in a salad bowl and dress. Bon appetit!
