1. Rice in a pineapple bowl


300 g round rice, pineapple, 70 g sugar, 220 ml coconut milk, 70 g coconut flakes, 1 cinnamon stick, 5 g salt, 10 ml lemon juice.

Cut the top off the pineapple and scoop out the pulp. Rinse the rice, add water so that it covers the cereal by 1 cm, salt and cook for a quarter of an hour. After adding coconut milk, lemon juice and sugar, mix and continue cooking. After 10 minutes, put diced pineapple, cinnamon stick into the porridge, add coconut flakes, mix. Cook rice for 5-7 minutes. Then remove from heat, cool, remove the cinnamon, shift the porridge into a hollow pineapple.

2. Snack "Funny Santa Claus"


6 large tomatoes (for 6 servings), 100 ml mayonnaise, 300 g hard cheese, 2 garlic cloves, 6 pomegranate seeds (for noses), 12 cloves/black peppercorns/raisins (for eyes).

For the filling, you need to grate the cheese, mix it with crushed garlic and half of the mayonnaise, if desired, add a little salt.

In washed tomatoes, carefully cut off the tops and take out the pulp with a teaspoon, being careful not to damage the walls of the vegetable. The inner part of the tomatoes can be added to the filling, but then it will change color. It is better to use it for other dishes.

Fill the barrels with a slide obtained from tomatoes with the filling. On one side of the tomato, a small inverted triangle should be cut off so that its base falls on a cut from the top, which, by the way, must be placed on top. Squeeze out the remaining mayonnaise into the resulting recess - this is the "beard" of Santa Claus. It is advisable to use a pastry bag or syringe, then it will be more embossed. After that, it remains only to insert the "nose" and "eyes" over the beard and add a drop of sauce to the top of the tomato.

3. Baked Eggplant with Parmesan and Basil


5-6 eggplants, 5 tomatoes, 400 g parmesan, 50 g basil, 50 ml olive oil, 5-10 g salt, 5-6 sprigs of oregano or parsley.

Wash eggplant, cut lengthwise into thin (1 cm) long slices, pour water, pour 2-3 g of salt and leave for 15-20 minutes. This will relieve the vegetable of bitterness.

At this time, cut the tomato into circles, grate the cheese, crush the garlic, tear the basil with your hands.

Take out the eggplants, dry them a little, put them on a baking sheet covered with foil. Sprinkle with a thin layer of cheese, place 2-3 cups of tomato, salt, drizzle with olive oil, apply a layer of cheese once more and add a few leaves of basil to each piece of tomato.

Send the eggplant to the preheated oven for 10-15 minutes. After removing the slices, they can be stacked on top of each other in 3 pieces while still hot. Garnish with sprigs of oregano or parsley.

4. Small puff tarts with vegetables

Cut the onion into rings, tomatoes and eggplant into thin circles, and mushrooms into slices. Defrost puff pastry, cut into rectangles, each of them form small sides with your hands. Fill the center with grated cheese. Put 3-4 pieces of any of the vegetables on the tarts, or several at once. Sprinkle with paprika flakes and sesame seeds, salt a little. Send for 20-25 minutes in a preheated oven. Garnish with arugula or parsley leaves when serving.

5. Open pie (tart) with mushrooms and spinach


1 sheet of puff pastry, 300 g of mushrooms or oyster mushrooms, 150 g of spinach, 200 g of low-fat granular cottage cheese, 2 eggs, onion, salt and spices to taste.

Chop the onion, cut the mushrooms into large thick slices, fry them together and lightly salt.

Cottage cheese mash with raw eggs. Spinach, if it was frozen, defrost, chop. Drain the oil from the mushrooms, send them to the cottage cheese. After adding spinach, stir.

Defrost the dough, form a side 2-3 cm high, place on a baking sheet covered with baking paper, make many frequent pricks with a fork and send to the oven preheated to 180 degrees for 10 minutes. Then take it out, put the filling into the recess, sprinkle with ground pepper and sesame if desired, return the cake to the oven for half an hour.

6. Hummus


200 g chickpeas, 30 ml olive oil, 15 ml lemon juice, 5 g cumin / cumin, 5 g smoked paprika, 50 g tahini vegetable oil).

Soak chickpeas overnight. In the morning, without changing the water, put to boil. Keep on fire for about 2 hours, adding liquid if necessary. When the chickpeas become soft, drain the fat, leaving only 100-150 ml.

Grind the beans with a blender into a puree, add olive oil and lemon juice. Continue grinding the chickpeas, adding tahini, paprika, zira/cumin alternately. If the hummus is too dry and crumbly, add a little broth and mix.

To prepare tahini, you need to fry sesame seeds and grind in a blender with vegetable oil.

7. Lasagna with spinach


6 sheets of lasagne, 350 g of spinach, 100 g of hard cheese, 100 ml of Bechamel sauce, 50 g of butter.

Defrost spinach, salt. Grease a baking dish with melted butter, put 2 sheets of lasagne overlapped on the bottom, pour half of the sauce on top, place half of the spinach on top. Cover them with two more sheets and repeat the steps, only use a little less sauce. Close the second layer with the remaining dough, grease the Bechamel, sprinkle with grated cheese. Bake lasagna for half an hour in the oven at 180 degrees.

"Bechamel" or white sauce is prepared like this. Melt 30 g of butter in a frying pan, add 30 g of flour, fry, stirring, until creamy. Add a pinch of nutmeg, pour in 250 ml of warm milk and 250 ml of cream. Cook over low heat, stirring, until thickened.

8. Fruit plate in pineapple


Cut the pineapple lengthwise, remove the pulp, or cut a Christmas tree in it - the natural oblong shape of the fruit greatly contributes to this. By the way, the leaves do not need to be removed, they will effectively complement this method of serving.

You can fill the pineapple with peeled and cut cubes of kiwi, peaches, slices of the pineapple itself and other tropical bright fruits or berries. Enjoy!
