When heated in a water bath, the milk will begin to separate into two fractions: whey and cottage cheese. At first it will look like cereal. Gradually, the curd will settle, and a translucent whey will appear on top. To separate them, pour the contents of the pan through cheesecloth into a bottle, the cottage cheese will remain on the cheesecloth. Squeeze lightly and cool it, and then you can use it. If you do not want to disturb the delicate structure of the cottage cheese, then do not squeeze it, but hang it in gauze over a bowl for several hours, the excess liquid will drain by itself.

First, pour semolina into sour milk and leave for a couple of hours. During this time, the cereal will swell. Then add flour, baking powder, sugar and melted butter to it.
You can add raisins, vanilla, fresh apples or berries.
Grease the form with butter and pour the dough into it. Bake for 35-40 minutes over medium heat (170-180 degrees) and at the middle level of the oven.

Knead the dough, roll out, put on a baking sheet covered with baking paper, cut into squares. Then you need to run a fork dipped in warm water along the dough so that thin lines remain.
Bake in a preheated oven for about half an hour. Sprinkle the finished cookies with powdered sugar.
