We offer a New Year's menu for the Year of the Pig without pork! Hot - to choose from: duck or chicken zrazy stuffed with mushrooms in a potato coat. Snacks are solid: tender fish in dough, chicken loaf and a chic Olivier salad with tuna. Dessert is a coconut biscuit. Check out the recipes and get ready!
Your favorite traditional Olivier salad can be made with tuna instead of sausage or meat and decorated as a Christmas wreath. It will be very beautiful and new!
Ingredients:
potatoes - 3 pcs.; carrot; bulb; eggs - 3 pcs.; canned peas - 100 g; pickled cucumbers - 3 pcs.; canned tuna - 1 can; wine vinegar - 3 tbsp. l. (you can do without it); mayonnaise - 100 ml; natural yogurt - 70 ml; mustard - 1 tsp; greenery for decoration.
Hard boil eggs and peel. Boil carrots, potatoes in uniforms until tender, cool and peel. Cut eggs and vegetables into cubes. Cucumbers also cut into cubes, if they are watery, blot with a paper towel. Drain liquid from peas and tuna. Leave a couple of spoons of peas, cubes of carrots for decoration. Peel the onion, cut into small cubes and marinate in wine vinegar. Then drain the vinegar.
Mix all prepared ingredients in a large bowl and season with mayonnaise, yogurt and mustard sauce. Lay out the salad in the form of a ring and garnish with herbs and vegetables.
Such chicken meat can be served as a hot or cold appetizer with different sauces.
You will need:
chicken fillet - 600 g; slices of white bread without a crust - 3 pcs.; egg; onion - 3 pcs.; garlic - 2 cloves; milk - 120 ml; salt, pepper, spices for chicken - to taste; vegetable oil - 2 tbsp. l.; sour cream - 2 tbsp. l.
Make minced meat from chicken fillet using a meat grinder or blender. Soak the bread in milk, mash with a fork. And fry the peeled onion and garlic cut into small cubes in oil over medium heat until soft. Combine all prepared ingredients in a bowl with spices, salt, mix well.
Put the minced meat in a parchment-lined rectangular shape, level it, brush with sour cream (or adjika, or your favorite sauce) on top. Cover with foil and send to an oven preheated to 200 degrees. Remove the foil after 30 minutes and bake for another 15 minutes without foil. Let the loaf cool slightly, slice and serve.
It's both pie and hot! Goes great with salad! Choose your fish.
Ingredients:
tilapia fillet or other fish - 2 pcs.; ready-made puff pastry - 250 g (yeast or yeast-free); curd cheese - 150 g; salt, pepper, spices for fish, lemon juice, herbs - to taste; yolk for lubrication; sesame seeds for sprinkling (optional)
Salt the thawed fish, pepper, sprinkle with spices and sprinkle with lemon juice. Leave to marinate for 20 minutes.
Mix curd cheese with chopped fresh or dried herbs - dill, for example.
Defrost puff pastry and roll out lightly on a floured surface, cut into equal small squares or rectangles. You should get an equal number of squares. Put a piece of fish on one square (cut off as much as you need), distribute a spoonful of cheese filling on the fillet, then cover with a second square and pinch the edges. Put the blanks made in this way in a baking dish covered with parchment, make cuts, brush with beaten yolk and sprinkle with sesame seeds.
Bake the fish in the dough in an oven preheated to 180 degrees for 20 minutes or until golden brown. Bon appetit!
For the dish you will need:
duck weighing 2.5 kg; apples - 3 pcs.; oranges -2 pcs.; potatoes - 3 pcs.; garlic - 3 cloves; honey - 1 tbsp. l.; salt, before fragrant - to taste.
Clean the duck, get rid of the feathers, if any, cut off the lower phalanges of the wings and pierce the places with the greatest accumulation of fat with a needle. From one orange, grate the zest into a bowl, squeeze the juice into the same place. Add salt, allspice, all the garlic passed through the press to the juice. Rub the resulting marinade over the duck and leave in the refrigerator in a film overnight.
The next day, wipe the duck and get rid of the remnants of garlic and orange so that they do not burn during the baking process. Coarsely chop the apples and orange, select the seeds. Lightly salt the duck inside and out and stuff with fruit.
Preheat the oven to 180 degrees. Put the duck in a deep dish, cover with foil and bake for an hour. After an hour, remove the foil and drain half of the fat (keep the fat, it makes a delicious fried potato), put the potatoes cut into pieces and send the duck back to the oven without foil. Bake another 45 minutes to an hour. Ready!
Such a luxurious hot dish should be served directly from the oven. Then the crust on the zrazy will be incredibly crispy, and the stuffed chicken will be juicy and softest.
Ingredients (for 4 servings):
chicken breast; champignons or oyster mushrooms - 200 g; hard cheese - 100 g; bulb; eggs - 2 pcs.; large potatoes - 4 pcs.; wheat flour - 4 tbsp. l.; vegetable oil - 5-7 tbsp. l.; salt, spices for chicken, herbs - to taste.
Cut the chicken fillet lengthwise into 4 pieces, beat with a hammer, salt, pepper, sprinkle with spices. Mushrooms and onion chop, fry in oil until tender. Add grated hard cheese and chopped greens to the mushrooms, mix. Whisk the egg with salt. Peeled potatoes grate on a fine grater, salt a little, squeeze out the juice and add a tablespoon of flour, mix.
On the fillet layers, distribute the filling of mushrooms and cheese evenly closer to one side, leave a couple of centimeters around the edges. Form into zrazy rolls. Then roll in flour, then in a beaten egg and “glue” the grated potatoes with your hands.
Fry the blanks in oil over high heat on all sides for a couple of minutes and transfer to a baking dish. Bake for 20 minutes at 200 degrees. Serve with your favorite side dish.
An ordinary biscuit can be turned into a bright holiday cake. And if you cut the finished biscuit in half and grease with your favorite cream. make a gorgeous cake!
Ingredients:
flour - 100 g; sugar - 120 g; eggs - 4 pcs.; colored coconut flakes - 45 g; starch - 20 g; baking powder for dough - 1 tsp.
Prepare two bowls. Separate the whites in one, beat the yolks with sugar in the other. Beat egg whites to stiff white peaks as well. In another bowl, mix flour, cornstarch, coconut and baking powder. Then add the dry ingredients to the yolks, mix with a spatula. Combine the resulting mass with protein, gently mixing from top to bottom. Put the resulting homogeneous dough into a greased round form. Bake at 180 degrees for 30 minutes. Check the readiness of the biscuit with a wooden toothpick. Cool the biscuit, choose from the mold, decorate with cream. Serve with ice cream, cream and berries/fruits.
