In the season of zucchini - our selection of the most interesting dishes with this vegetable.
Cut a small young zucchini lengthwise into thin strips. Lightly fry in olive oil until golden brown on both sides. Lay out on a paper towel. Cut an oblong tomato into several pieces. Cut the mozzarella ball into thin strips. Put a strip of cheese on the zucchini, then a basil leaf and a tomato, wrap it up with a roll. Secure with a skewer or tie with green onions. Drizzle with balsamic vinegar.
Tart Ingredients:
1 1/4 cups flour; a pinch of salt; 90 g of oil; 4 tbsp. l. cold water; 1 tsp vegetable oil.
Filling Ingredients:
2 small zucchini; salt, black pepper; a piece of butter (15-20 g); 500 g leeks; a teaspoon of chopped thyme; a glass of heavy cream; 2 eggs; 1/2 cup grated hard yellow cheese (Gruyere type).
For the dough, mix flour and salt in a large bowl. Add butter cut into pieces. Mash with a fork, adding a spoonful of water. The dough should hold its shape and not fall apart. Shape into a ball, wrap in cling film and refrigerate for half an hour. After 30 minutes, roll out the dough and put it in a mold (24-26 cm) for tart, forming sides. Pierce with a fork, line with parchment paper or foil, and top with peas or rice. Bake for 12 minutes in the oven at 220 degrees. Then pour out the peas, select the paper and bake for another 15 minutes. Cool the finished tart. Place the sliced zucchini on a greased baking sheet and bake for 5-6 minutes on each side (turn over). Do this while the tart is baking, just place the baking sheet with the zucchini on the bottom shelf.
Melt the butter in a frying pan over medium heat, add the leek, thyme and salt. Cook covered for 5 minutes.
Mix cream, eggs, chilled cooked leek and pepper in a bowl. Pour into tart. Lay the zucchini on top. Sprinkle with grated cheese and thyme. Bake for half an hour at a temperature of 180-190 degrees. Cool and serve.
We wash the zucchini and cut out the part with the seeds, then rub it on a coarse grater. Add chopped onion, egg, flour and spices. Spoon into hot skillet and fry until crispy. Serve with sour cream or yogurt.
