Capers are flowering buds of low-stemmed shrubs. Buds are truly one of the most coveted ingredients in Mediterranean cuisine. The spice belongs to the family Capparaceae , in the genus Capparis .
In general, their small creamy pimples are collected by hand in the early morning hours of the day. Shortly after harvest, the buds are washed and allowed to dry for several hours in the sun before being placed in jars with salt, vinegar, saline, or olive oil.

Capers are used in cooking. Raw, they have a neutral taste and must be processed to reveal their unique, spicy, pungent aroma.
They are used as an additive in the preparation of tartar sauce, for seasoning tuna, venison, salmon, tomato sauce. They are also used as a side dish in pizzas. Capers give a special taste to vegetables, meat, beef and fish (especially with anchovy sauce).
