Calcium acetate is a preservative that preserves products well, stopping the growth of harmful bacteria; has disinfectant properties. It is also used as an acidity regulator and as a sealant for plant tissue. It is a crystalline substance with the smell of acetic acid. It is obtained by reacting calcium hydroxide or carbonate with acetic acid.

Use

Softens the pronounced sour taste of acetic acid in various products. Calcium acetate (E 263) is used to protect bakery products from damage caused by bacteria. In agriculture it is used to preserve fodder. In practice, the additive may have a bactericidal effect or act on the principle of retarding the growth and reproduction of bacteria and fungi. As the effect of acetate is limited, it is used in combination with other preservatives. Today there are special requirements for preservatives, and the most important thing is that they are safe for human health. Additives must not react with the packaging of the product and its quality must not be degraded when food supplements are used.

Impact on humans

Calcium acetate is completely absorbed by the body, the released acid has a slight non-specific irritation. There are no restrictions on the permissible daily amount of the supplement. E 263 is approved for use in food products (bakery products, canned fruits and vegetables) and for domestic use in many countries.

In industrial quantities the substance can be dangerous. Avoid contact with eyes and direct skin contact. To prevent the inhalation of acetate dust, good ventilation of the work areas is required. First aid in case of dust in the eyes - immediately rinse with plenty of water, in case of skin contact - wash the affected area with water and change clothes.
