Potassium ascorbate - food supplement E 303 protects food from spoilage, oxidation and the appearance of a bitter taste. Antioxidants can be natural and synthesized. They are needed for the preparation of oil and fat emulsions. The substance is obtained by separation of ascorbic acid and potassium hydroxide, potassium salt is ascorbic acid, is a white crystalline powder, found in some plants.

The supplement E 303 is banned in many countries around the world because research confirming its benefits or harms has not been completed. Of course, the properties of the antioxidant depend on the product to which it is added, so combinations of several antioxidants are used, mutually increasing their action. Potassium ascorbate is also used in this scheme.

Use

Potassium ascorbate is used in the food industry as a strong antioxidant and color regulator in meat products and sausages, as well as an improver in the production of bakery products.

E 303 does not affect the growth and reproduction of harmful microorganisms and fungi, so its use can not compensate for the poor quality of the final product and the disruption of technological processes.

The additive is widely used in the freezing of fish to extend its shelf life.

E 303 is a substance derived from ascorbic acid and has some properties characteristic of it. In moderation, potassium ascorbate mobilizes the body's defenses, improves the absorption of potassium micronutrients, participates in the formation of bone and connective tissue. The supplement is suitable for smokers and people who often consume alcohol because it improves the condition of the skin, hair and bone tissue.

The maximum permissible amount of potassium ascorbate is up to 15 mg. When used in food, it is not used alone, but only in combination with other ascorbates. Does not cause allergic reactions.
