E 320 is a food supplement used as an antioxidant, ie it is a substance that is able to protect products from oxidation, also helps to preserve their color, prevents the appearance of bitter taste.

E 320 is a mixture of several organic compounds that are isomers. The additive does not dissolve in water, but is soluble in organic weakly polar and non-polar solvents: methanol, ethanol, oils, fats. The color can be white, slightly pink or white-yellow, and the smell - a faint characteristic.

Use

This antioxidant , in an amount of 0.01-0.02%, protects melted and cooking fats, also those of animal origin in the process of heat treatment. It is not necessary to increase the dose of the supplement, because the amount does not affect its properties (they remain unchanged). An increase in synergistic properties can only be achieved when it is used with other synergistic substances or antioxidants (for example: citric or phosphoric acids).

By adding E 320, the shelf life of food products is significantly increased, it is used for impregnation of packages for products containing fats; also as an antioxidant in pharmaceutical and various cosmetic products, to stabilize industrial oils, waxes, fats.

The food supplement may be a component of fats and oils used in the preparation of foods at high temperatures; in fats from beef and mutton, fish and chicken; in dried meats, dry cereals, concentrates of broths and soups, spices, sauces, nuts, chewing gum.

Impact on humans

Medicine is of the opinion that E 320 is a carcinogen and alters DNA cells by interacting with nitrates. Studies are currently underway to prove that the supplement helps slow the formation of cancerous tumors and the development of the herpes virus.

The permissible daily amount of butyl hydroxy anisole is 0.5 mg / kg body weight.
