E 325 is a dietary supplement that belongs to the group of antioxidants. From a chemical point of view, it is the sodium salt of lactic acid. The supplement acts as a means of removing moisture, absorbs it perfectly from food, enhances their antioxidant action. In appearance, the substance is a homogeneous syrupy liquid, without the presence of any particles or sediments. The acidity of the 1% solution is 6.7-7.6. The density of 50% solution - 1.28. The solubility in water is excellent. Sodium lactate is obtained by neutralizing lactic acid.

Use

This lactate is widely used in the food industry. It is used for the preparation of bakery products, for frozen and vacuumed meat products, because the additive prolongs the shelf life. During the canning of vegetables, sodium lactate helps to achieve the homogeneity of the brine and improves the taste of products that include olives, tomatoes, gherkins and onions. E 325It is used in the making of creams, cocktails, liqueurs in order to prolong their shelf life and to improve their organoleptic properties. The food supplement is used in the production of various candies (caramel, jelly), melted cheese; increases the action of antioxidants and is an excellent antibacterial agent; in cosmetics - for the preparation of liquid soaps and shampoos; contained in some medicines.

Sodium lactate is banned for use because it has not passed all the necessary tests. There are no specific maximum daily doses. People with lactose intolerance should not take the supplement.
