Potassium lactate or E 326 is internationally known as Potassium Lactate. This is a dietary supplement that belongs to the group of antioxidants. It is a potassium salt of lactic acid. Potassium lactate acts as an acidity regulator, salt substitute, emulsifying salt and humectant. It exists only in the form of a solution, which is obtained with the help of lactic acid and impurities (carbonates and salts of polylactic acid).
The additive E 326 dissolves well in alcohol and water.
Because potassium lactate is easily absorbed and dissolved, it is an excellent mineral and trace element. The additive is used as a substitute for table salt and as a sealant in plant tissues in the processing of fruits and vegetables. Due to its antioxidant properties, E 326 is added together with other antioxidants in frozen products to extend their shelf life and prevent damage due to fat oxidation. As a moisturizer it is used in cosmetics.
Potassium lactate is found in cheeses, pastries and baby food.
There is no set daily allowance for the supplement. No possible hazards with regard to hygiene standards are indicated. The use of the substance in baby and child foods is not desirable. People who are lactose intolerant should also not consume products containing E 326 . Potassium lactate is approved for use as an acid regulator in margarines, canned broths and soups, as well as in jams, marmalades, jellies, canned fruits to maintain acidity in the range of 2.9-3.5. In food it is used as a salt and antioxidant, including in the canning of fruits and vegetables. In bakery, pastry and confectionery it is used as an improver.
