Ammonium lactate is a dietary supplement that belongs to the group of antioxidants. It contains a salt of lactic acid and ammonia, which is the basis of the substance. Synonyms: ammonium lactic acid, lactic acid ammonium salt, ammonium 2-oxypropionate. E 328 is a white crystal, soluble in alcohol and water. Lactic acid is well absorbed by the body. Ammonium lactate is obtained from lactic acid with the addition of impurities (salts of polylactic acid and carbonates).

Use

In the food industry, E 328 is used as an acidity regulator, salt substitute, flour improver for making bakery, pastry, confectionery and other food products. Due to its antioxidant properties, the additive is used together with other antioxidants in frozen products in order to prolong their shelf life and prevent changes due to fat oxidation.

The substance is also used as a moisturizer in the production of cosmetics.

Ammonium lactate is found in many fruits, sauerkraut; formed in the muscles during exercise.

There is no set maximum daily amount, but lactates are not recommended for addition to baby food.
