Food additive E 341 is an amorphous white powder that does not dissolve in water but is well soluble in acids. As the temperature rises, phosphates (unlike other substances) become less soluble.
Purpose: leavening agent, acidity regulator, humidifier, stabilizer, color fixative, emulsifying salt, etc.
Along with other phosphates, E 341 is used as an emulsifying salt in the production of processed cheeses. It is used as a laxative and additive to powdered milk and cream, in condensed milk, in the preservation of fruits and vegetables, in the manufacture of various tablets, in sugar syrups, in granulated sugar, in cocoa, often in bakery products. The substance is used in dyeing fabrics, also in the production of fertilizers, soft abrasives, glass, ceramics, as an integral part of toothpaste and others.
In some cases, it causes diseases of the gastrointestinal tract. There is information that calcium phosphate leads to the development of cancer and affects the level of cholesterol in the blood.
