E 434 belongs to the group of stabilizers used to maintain the viscosity and consistency of food products and to improve their quality. The additive has a gel-like structure or is an oily liquid with a slightly bitter taste and a characteristic odor. It is obtained by polymerization of complex esters of sorbitan or lauric acid in ethylene oxides. Admissible impurities are formed in the production process, for example: free lauric acid and solvents.
Polysorbate 40 is used as an emulsifier to facilitate the preparation of various emulsions.
Limited amounts of the additive are used in the food industry. It is widely used in the manufacture of dispersed oils and fat-soluble flavors. It is added mainly in fats and margarines, in the production of cream, ice cream, cakes and more.
In products with high acidity E 434 is added to form foam, and in fats - as an agent to stop foaming. Polysorbate is also used in pharmacology and cosmetics to make personal care products.
The permissible daily dose of the supplement is not more than 20 mg per kilogram and is determined individually.
