The food supplement refers to the stabilizers that are used to preserve the viscosity and consistency of the products and to improve their properties. It is approved for use in some countries, but based on various sources, its addition to food must be extremely careful.

Polysorbate is a dispersing agent, can be used as a stabilizer and as an emulsifier. It is a lemon-colored liquid with a fine bitter taste.

E 432 is obtained by polymerization of sorbitan esters or lauric acid in ethylene oxide. Impurities such as lauric free acid, solvents and polyoxyethylenes are formed during the production process.

Use

Condensation of oxyethylene chains gives the esters of the acid and sorbitan increased heat resistance and stability to hydrolysis, as well as high moisture and water solubility. Due to these properties, the additive E 432 ranks among the strongest emulsifiers.

The substance is used in the food industry in strictly defined quantities. It is widely used in the preparation of dispersed oils and fat-soluble flavors.

The additive is used mainly in the production of margarines and fats, cream, ice cream, cakes and others. In products with high acidity it is added as a foaming agent, and in fats - as a means of stopping foaming.

Polysorbate is used in pharmacology and cosmetics to make hygiene products.

Impact on humans

The maximum allowable daily dose of the supplement is 20 mg per 1 kg of body weight and is determined individually. Prohibited from food in some countries around the world.
