Stearyl tartrate is a stabilizing substance that preserves the viscosity and improves the consistency of food products. Use

Stearyltartrate is used as a stabilizer and emulsifier in high fat products for quality formation and structuring of fat crystals. The process of esterification of the additive allows for a qualitative change in the melting area, reduces the resistance to hydrolysis, facilitates the processing of the raw material. Thanks to these properties, E 483 significantly improves the breaking of dough, ice cream, desserts, margarines. It is used in the production of dry cream for coffee and sauces, it is able to prolong the activity of yeast cells and to protect the aromas from changing the taste.

The additive is used to emulsify the substances and process the flour to improve its quality. E 483 is also used in the production of:

  • butter dough pasta;
  • confectionery pasta;
  • desserts;
  • bread.

Impact on humans

Although the stabilizer E483 is not officially banned for use in the European Union, the food additive is excluded from the list of permitted in Russia. Many countries have decided to stop using the additive in food production due to the possible side effects of its use. They are primarily due to the chemical structure and properties of the stabilizer.
